Around here, we are all getting ready for school to start, so it is that time when I start looking for recipes that are quick to make, take just a few ingredients and are easy to double the recipe so that I can freeze half for another time.

The flavor is unreal, it is a comfort food by all standards and it is so easy to make. This Amish Country Casserole is so tasty and filling, I can’t believe that it is not more popular than it is.

Try it once and it is going to be part of a routine in your home and everyone loves this!!

This dish is generally served with crusty bread at my house, and to be honest, I generally add in a small can of sliced mushrooms when I am cooking the meat.

            There is no certain type of pasta listed in the recipe, why?

With this dish, you can use any form of pasta that you like. I have made this with rotini, egg noodles and elbow macaroni. The type of pasta is one of those mute points here.

            Can I switch the type of meat?

Oh my! Yes, you can use venison, ground turkey or even chicken if you prefer. Whichever meat you choose, you do not need to change anything else in the recipe. A change in meat will turn this into a whole new dish.

            How do I freeze this, if I make a double of the recipe?

Make it as stated on the recipe, right up to the part, separate the casserole into the number of meals that you plan for. After it is fully baked, cool completely, seal with an airtight lid or plastic wrap and then a layer of aluminum foil, then place into the freezer. You can freeze for up to 3 months.

What do you need to make Amish Country Casserole

            1 ½ ground beef, lean

            16 ounces pasta,

            1 small yellow onion, chopped

            2 garlic cloves, freshly minced

            1 tbsp Olive Oil

            1 small can Cream of Mushroom Soup

            1 can condensed Tomato Soup

            1 cup of milk

            ½ tsp Paprika

            1 tsp salt

            ½ tsp black pepper

            1 tsp dried Parsley

How to make Amish Country Casserole

FIRST STEP:

Cook the pasta according to the directions

SECOND STEP:

Preheat the oven to 350* and spray a casserole dish with nonstick spray

Place a skillet over medium heat and saute the garlic and the chopped onion in the Olive Oil

When the onion is slightly translucent add in the ground beef and brown completely, Sprinkle with the salt and pepper

Drain the pasta and return to the pot

THIRD STEP:

Add in the Cream of Mushroom Soup and the Tomato soup. Stir while adding one cup of milk

Drain excess fat from the ground beef and add the meat to the pot of pasta and soup

FOURTH STEP:

Stir well and carefully pour into the prepared casserole dish
