Apple Filling Bread Pudding

         Bread pudding is a warm, tasty treat with a delicious vanilla syrup drizzled over the top. Some would say that this is the best apple dessert by far! Sometimes I may have to agree.

When you can have something so delicious and easy to make, topped with sauce and a scoop of vanilla ice cream, why wouldn’t you call this the best apple dessert ever?

            I always thought this was a way of using that bread that was drying out and getting old. You know, waste not want not theory? This dessert is simple to make and you use some apples and you can add raisins if you like. The vanilla syrup is obviously optional, I have heard of many that make a glaze with confectioner’s sugar also.

            If I am rushed and need a dessert quickly due to my forgetfulness, this is the easiest and quickest one to turn to for me. This is also one that everybody loves and does not expect.

            Can I add raisins?

Certainly, the combination of apples and raisins always tastes great together! You could also add some walnuts or craisins if you like.

            Do I have to use fresh apples?

Of course not! You could use a can of Apple pie filling instead. If you choose to use pie filling, eliminate the vanilla yogurt.

            Which type of apple is suggested when using fresh apples?

With this recipe, I do not believe it makes a difference. I generally use the apple that is on sale at my local market that week.

            Can I make this ahead of time?

This can be made and put together the night before, then placed in the oven and baked in the morning.

What do you need to make Apple Filling Bread Pudding

            4 eggs, beaten

            1 cup plain or vanilla yogurt

            1 cup whole milk

            2 tsp cinnamon, divided in half

            ½ tsp nutmeg

            ½ cup + 2 tbsp sugar

            8 cups bread, cubed (I use a combination of all breads I have at the time)

            3 to 4 apples, peeled, cored and cubed

Sauce:

            1 cup butter, unsalted

            1 cup light brown sugar

            1 cup heavy cream

How to make Apple Filling Bread Pudding

FIRST STEP:

Preheat the oven to 350*

Lightly spray a 9×13 baking pan

SECOND STEP:

In a bowl combine the eggs, vanilla yogurt, milk, cinnamon, nutmeg and ½ cup of the sugar. Whisk together thoroughly

Stir in the apples and the raisins

THIRD STEP:

Gently fold in the cubed bread

Put the mix into the prepared pan

FOURTH STEP:

In a small bowl, mix together the remaining sugar and 1 tsp of cinnamon, stir to blend

Sprinkle over the bread mix in the pan and place pan in the oven

FIFTH STEP:

Bake for 35 to 40 minutes

While the pudding is baking make the sauce for on top

In a saucepan, melt the butter and add in the brown sugar

SIXTH STEP:

Cook on low until the sugar is dissolved

Whisk in the heavy cream and simmer until it thickens, stirring occasionally.

SEVENTH STEP:

Remove the pan from the oven and let sit for 10 minutes

Pour the sauce over the top of the bread pudding

Top with a scoop of vanilla ice cream if desired and serve.
