Avocado Tacos

            Everyone loves Tacos, including me. There are times though that I do not want the tortilla or taco shells. Even if I buy gluten free, it is just too much breading of sorts if you will.

So as I was scanning around looking for some healthier Submarine sandwiches, I saw how someone had suggested using an avocado as a salad bowl. Of course, I had to ask, why salad? Could I replace taco shells or tortillas with an Avocado?

            Avocados are so healthy, they are smooth and versatile. Instead of scooping out and dicing the Avocado to put it into a taco, just add the taco ingredients into the avocado. This can also save on washing some dishes too. This dish will come together quickly and you can sit down to enjoy it without cooking too much.

            My family fell in love with these, I really should have made more. Since I was unsure how they would go over, I did not make too many. My mistake, that will not happen again.

            How do I store these?

First, do not count on having any left after dinner to worry about storing. However, if you do have some, place them in an airtight container and store in the refrigerator for 2 days. I do not recommend freezing these.

            Can I make these ahead of time?

I would say that you can make and prepare each portion, but do not fill the Avocado until you are ready to eat. The hot that sits on top of the cold avocado just makes your tongue do a fancy dance.

            Do I need to put Avocado on the top?

If you do not want to top the taco meat with diced avocado, then go ahead and leave it off.

What do you need to make Avocado Tacos

            4 to 6 Avocados, Hass are the best for this dish

            1 ½ pounds lean ground beef

            1 packet Taco Seasoning

            ¼ cup water

            8 ounces Mexican Blend Cheese

            1 medium tomato, diced

            Optional: Cilantro for garnishing

How to make Avocado Tacos

FIRST STEP:

Cut the Avocados in half and remove the pit

Use a spoon to hollow out the Avocado more, reserve the avocado to dice and place on the side

SECOND STEP:

In a large skillet, crumble the ground beef and cook thoroughly

Drain the excess fat from the ground beef

THIRD STEP:

Sprinkle the Taco Seasoning over the ground beef and add in the ¼ cup of water

Stir to combine and simmer for 5 minutes

FOURTH STEP:

Turn the heat off, remove the skillet from the burner and add all but ½ cup of cheese

Stir to melt the cheese, it should only take a minute or so.

FIFTH STEP:

When ready to serve, add ¼ cup of taco meat to each half of the avocados

Place a few pieces of Avocado on top, some diced tomato and sprinkle with a little cheese.

Optional: Top with Cilantro for garnish
