I do recommend using any leftovers you may have. This is perfect for the weekly refrigerator cleaning. We save money and clean and still get a great dinner.

            Beef stew is a necessary meal for families, especially with the colder weather coming upon us. There is nothing like a warm dinner on a chilly evening. Loaded with chunks of beef, carrots, potatoes, onions and celery. Plus more, if you have it in the refrigerator.

This is no problem! Make this classic beef stew from fresh foods. You can use a package of mixed frozen vegetables, roast beef from dinner, and one or two potatoes peeled and diced.

Certainly, just leave out the cornstarch. If you want the soup and then the next day turn it into a stew. This is done easily by adding a little more broth and the cornstarch.

            4 cups of cooked roast beef

            2 cups leftover vegetables, any type

            2 cups mixed vegetables, frozen is fine

            3 cups beef broth

            2 tbsp water

            1 tbsp cornstarch

How to make Awesome Beef Stew

FIRST STEP:

Place the beef broth into a large Dutch oven

Add in the cut beef, frozen vegetables, leftover vegetables or the fresh vegetables.

SECOND STEP:

If using fresh, allow to cook over low heat in the broth until done.

If using the leftover vegetables, allow to cook to a boil over medium heat until all vegetables and meat are heated through.

THIRD STEP:

In a small dish mix the water with the cornstarch and stir well

Slowly add the mixture to the Dutch oven stirring constantly as it thickens

FOURTH STEP:

If you want a thicker stew, make a second dish of cornstarch and water.
