Baked Garlic Parmesan Chicken

         We are back to one of my favorite comfort foods! This means it must be chicken and garlic! For me, any recipe that includes chicken with garlic is good. There is nothing finer than coming home to a dinner that makes the whole house smell scrumptious!

This dish is nothing if it is not a filling and delicious protein packed meal. This is also one that the whole family absolutely loves!!

This dish has perfectly juicy, yet crispy chicken. Soft potatoes and the flavors of yummy garlic and butter. This also works as one of those meals you could call an all in one.

However, feel free to serve another side dish if you choose. The sauce in this recipe is ebay to make, easier to love and makes the whole meal what it is!

            What side should I serve with this dish?

This recipe does work fine as an all in one meal, however, I know that I have also served a dinner salad with it, and some added vegetables on the side.

            Which cut of chicken is best?

In this recipe I have used drumsticks and thighs, personally, I prefer bone in chicken thighs. They are so juicy and tender to start with, this dish makes that even more true. Besides, if you happen to cook a few minutes longer, chicken thighs do not dry out the way the chicken breast does.

            Which type of potatoes is the best for this dish?

Tough choice here. Yukon gold is usually my top choice for any casserole dish. I have also used the Baby Dutch variety, as in this recipe and it works amazingly!

What do you need to make Garlic Parmesan Chicken With Potatoes

            6 chicken thighs, bone in and skin on

            1 pound of halved Baby Dutch potatoes

            4 cups baby spinach

            4 tbsp butter, unsalted and divided

            1/2 tbsp Italian Seasoning

            Salt and pepper to taste

            Parsley for garnish

Sauce:

            1 cup low sodium, low fat chicken broth

            ½ cup half and half

            ½ stick butter, unsalted

            ½ cup Parmesan Cheese, grated

            4 cloves garlic, minced

            1 tsp dried thyme

            1 tsp dried basil

            ¼ cup flour

            ½ tsp dried oregano

How to make Garlic Parmesan Chicken With Potatoes

FIRST STEP:

Preheat the oven to 400* and lightly spray a 9×13 baking pan

Melt 2 tbsp of butter in a skillet and add the baby spinach

SECOND STEP:

Cook until just wilted

Remove from the heat and set to the side

THIRD STEP:

For the sauce, lower the heat to medium and add butter to the skillet, Add minced garlic and saute for 1 to 2 minutes

Whisk in the flour and cook for 1 minute

FOURTH STEP:

Slowly whisk in the chicken broth

Stir in the parmesan cheese and the half and half

Cook for another 3 to 5 minutes, then add the remaining spices

FIFTH STEP:

Season the chicken thighs with Italian seasoning, salt and pepper and place skin side up in the baking dish

Top the chicken with the halved potatoes and the cooked spinach

SIXTH STEP:

Cover with the sauce and place in the oven for 20 to 25 minutes, until the chicken is cooked all the way through

If desired, place under the broiler for  a minute or two to crisp up the chicken skin.

Remove from the oven and serve hot
