There are tons of people who love zucchini, and I happen to be one of them. I will put this vegetable into any dish that is possible to add it to. This recipe is perfect, it is low carb, gluten free and easy to make.

            These zucchini fritters are the bomb! They come out crispy, flavorful and this recipe is kind of versatile. Versatile as in you could add spices if you want heat, you can bake these as well as fry them.

Baked Zucchini Fritters can be served as a side dish, an appetizer or even as the main course. Yes, they are so substantial that they are a main course.  This recipe will make enough for 3 people. Adjust the amounts accordingly for the number of people you need to serve.

            How should I store these fritters?

Once they have completely cooled off, the fritters should be placed in a ziploc bag or an airtight container. They can sit in the refrigerator for 3 to 4 days. To reheat, simply microwave for a minute or two, or place back in the oven and bake at 400* for 10 minutes.

            Can I add spice?

You could certainly add chili powder or red pepper flakes to the coating. You could also dip them into red hot sauce or salsa to obtain some heat.

            Can I make these ahead of time?

You can make it all ahead, but you will need to keep the ingredients separated while you store them in the refrigerator.

            Can these be fried?

These can certainly be fried. Use a heavy skillet with about 3 to 4 tbsp of oil in the bottom. Flatten the scoops down with the back of the scoop, just as you would if you were baking.

What do you need to make Baked Zucchini Fritters

            2 pounds of zucchini, shredded. This would be about 6 cups of shredded zucchini

            2 cloves of garlic, grated

            2 large eggs

            ½ cup flour

            ½ cup parsley (you could use dill or green onions)

            Salt and pepper to taste

How to make Baked Zucchini Fritters

FIRST STEP:

In a large bowl, place the shredded zucchini, sprinkle with 1 tsp salt, stir and let sit for 10 minutes.

In another large bowl combine the eggs, flour and garlic. Add in desired salt and pepper and the parsley, (or which herb you use)

SECOND STEP:

Using your hands, squeeze as much liquid out of the zucchini as is possible. Add this to the bowl with the egg mixture, do the zucchini in batches

Stir well to combine

THIRD STEP:

Preheat the oven to 400*, place parchment on two large baking trays

Using a large ice cream scoop, place scoops of the batter onto the baking sheets, flattening with the back of the scoop

FOURTH STEP:

Bake for 10 to 12 minutes, flip over and bake for another 10 to 12 minutes

These can be served cold or hot, Sour Cream, Greek yogurt or other dipping sauces or bowls as desired.
