Chinese cuisine is a fan favorite everywhere. Sometimes, though, it is difficult to find a Chinese Restaurant that makes the foods you really like. Cashew Chicken is one of those recipes for me.
I got so tired out from trying to find the perfect Chinese Restaurant that I just decided it was easier to sit down and figure out a way to make it myself, without losing all the great flavors.
This is what I came up with and I am pretty sure that this is the only Cashew Chicken recipe that will ever be needed by anyone anymore. Within this simple recipe there are crisp cashews, fresh green pepper and snow peas.
The sauce is made with Cornstarch so it is more opaque and not creamy. The chicken is cut into bite sized pieces and allowed to simmer for a bit.

Can I add other Vegetables?
I will generally add the broccoli to ours. My family enjoys the added crunch. I do enjoy the coloring so I will add some red bell pepper also.
Should I serve this with Fried Rice?
This can be served with plain white rice or if you choose Fried Rice. I enjoy the white rice with the sauce of my Cashew Chicken.
Can I add carrots as I have seen many Chinese Restaurants do?
You can add any vegetable you would like to add to the dish. Some people like it with all the vegetables mentioned and others will stick with just green pepper and snow peas.
What do you need to make Best Ever Chinese Chicken Recipe
2 tbsp Olive Oil
1 tsp Sesame Oil
2 pounds boneless and skinless chicken breasts or thighs
1 tbsp Soy Sauce
2 tbsp Cornstarch
1 green pepper thinly sliced or cut into chunks
4 ounces mushrooms, sliced
1 ½ cup snow peas
2 tsp garlic minced
1 tsp ginger minced into a paste
Sauce
1 ½ tsp Rice Wine Vinegar
⅓ cup Soy Sauce
3 tbsp white cooking wine
1 tbsp honey
1 tbsp Cornstarch
1 tbsp Olive Oil
2 tbsp Brown Sugar
How to make Best Ever Chinese Chicken Recipe
FIRST STEP:
Cut the chicken into bite sized pieces
In a bowl mix the soy sauce and the cornstarch

Add the chicken to the bowl and coat well
SECOND STEP:
In another bowl, add the cooking wine, rice wine vinegar, soy sauce, olive oil, honey, cornstarch and brown sugar.

Combine well
THIRD STEP:
In a skillet on the stove add in the sesame oil and the olive oil on a medium high heat
Add the meat to the skillet and cook until the chicken is browned on all sides

FOURTH STEP:
Remove the chicken and set to the side on a plate
Into the skillet, add the mushroom, cashews, snow peas and the bell pepper with the sauce and cook until tender
FIFTH STEP:
Mix in the minced garlic and the ginger and stir well.

Saute for 30 seconds more and then add the chicken back into the pan.

Serve with a side of white rice and garnish with chopped green onions.
