Christmas Cookies: Helly Dolly Squares

These squares have many different names but we've always called them Hello Dollys (I have no idea why!) These are my mother-in-law's favorite cookie - she requests these instead of cake for her birthday. The are also super easy to make and, best of all, almost no dirty dishes! They freeze really well - just layer between waxed paper in a large freezer bag.

2 cups graham cracker crumbs
½ cup butter, melted
1 cup shredded coconut
1 cup chocolate chips
1 cup chopped pecans
1 14 ounce can sweetened condensed milk

Preheat oven to 350. Coat a 9x9 baking dish with cooking spray. Put graham cracker crumbs in the pan and drizzle the butter over the top. Use a fork to mix together and then use your fingers to push the crust into the bottom of the pan.

Sprinkle on the coconut, chocolate chips, and pecans. Pour the sweetened condensed milk over the top. Put in the oven and bake for about 30 minutes or until it turns golden brown. Let cool completely then cut into bars.

You can keep them in the freezer, if you have the self-control not to eat them all in one sitting!
