Easy Taco Casserole

Sometimes I need a meal that I can throw together fast. This easy taco casserole is that meal. If I have taco meat in the freezer (I love doing a big batch of taco meat in the crock pot) and a few ingredients in the pantry, I can get this meal on the table in less than 30 minutes.

With a few packages of taco meat in the freezer this easy taco casserole can be on the table in less than 30 minutes! It's a quick and easy dinner recipe.

Easy Taco Casserole

This easy recipe isn't necessarily a healthy dinner, but it's quick, and when I'm in a hurry, it's something we can throw together without depending on fast food. And it's just yummy!

What you'll need:

You don't need a pile of ingredients for this easy taco casserole but you can also add in lots of extras and make it your own. It's very versatile. The basic ingredients necessary:

  • 1 pound taco meat (cook it in the crock pot!)

  • 1 bag corn chips (about 4 cups, or so)

  • 1 can corn, drained

  • 1 small bottle taco sauce

  • 2 cups shredded cheddar cheese

  • optional add-ins: sliced black olives, re-fried beans, diced bell pepper or jalapeno peppers

  • toppings: more cheese, sour cream, diced peppers

Once you have all your ingredients, grab a casserole dish and start layering. Start with half the taco meat, top it with half the corn, cheese, taco sauce, and chips. Repeat the layers, ending with a little more cheese. If you're adding in any other ingredients, just layer them in! Basically, if you like it in your taco, you could include it in this easy taco casserole.

Easy Taco Casserole Recipe

  • 1 pound taco meat

  • 1 bag corn chips (about 4 cups)

  • 1 15 oz can corn

  • 1 small bottle taco sauce

  • 2 cups shredded cheddar cheese

  • optional additions: sliced black olives, refried beans, diced bell pepper, or jalapeno peppers

  • Toppings: shredded cheese, sour cream, diced peppers


  1. Preheat oven to 350.

  2. Cook taco meat according to package directions, if it isn't already pre-made.

  3. In an ungreased 3-quart baking dish, layer half the meat, corn, taco sauce, cheese, and chips.

  4. Repeat each layer, finishing with the corn chips on top.

  5. Include additional ingredients, as you like (black olives, refried beans, bell pepper, or jalapeno pepper).

  6. Top with cheese.

  7. Bake for 15-20 minutes, until heated through.
