If I were stranded on a desert island, I think one of the things I'd miss the most is tacos. I LOVE tacos. I could happily eat them every week (and we often do!). My family, on the other hand, like tacos, but prefer a little more variety. Over the years I've learned to be a bit more creative with my taco love and have found some fabulous ways to fill that taco craving. Keep reading for some fabulous easy taco recipes.

Bulk Freezer Cooking

One simple technique I love to use to keep my freezer filled is by bulk cooking different ingredients. When I have a few items pre-cooked and ready to go I can get dinner on the table fairly quickly. Taco meat is one of those quick and simple recipes that freezes very well, making it an easy item to store in your freezer. It's one of my bulk freezer cooking staples.

It's very easy to cook taco meat in the crockpot - you can cook up a huge batch, portion it into family-sized portions, and put it in the freezer. If you drain and rinse the meat (get rid of some of the excess fat) and make your own homemade taco seasoning, you can have a very frugal meal on the table quickly.

Easy Taco Casserole is one of our family favorites. It's kind of like a layered lasagna with taco meat, corn chips, and a few other ingredients. It's not healthy but it's a simple recipe that is easy to throw together and get in the oven for a quick weeknight meal. And it's tasty!

Easy Crockpot Taco Soup is a fabulously easy recipe to put together - especially if you have a few things (like beans, corn, and taco meat) stored away in the freezer. It's a 'dump' recipe - just dump all the ingredients in the crockpot, set it low, and let it cook!
