Honey Glazed Chicken

Here is another great recipe that my family loves to eat in the winter. This chicken is really good when served with some roasted veggies, which are super easy to prepare. The hardest part is cutting up the vegetables. All you need to do is chop up whatever you have on hand – potatoes, onion, carrots, or squash. Any combination of these will taste great. Just chop them all into chunks about the same size, dump in a roasting pan and stir in some olive oil, salt, pepper, and thyme. Cook it in the oven with the chicken and your house will be full of the most wonderful, savoury smells. And, if you cook some extra veggies, you’ll have enough for a great roasted veggie soup the next day!

1/3 cup honey
1 Tbsp balsamic vinegar
2 tsp dried thyme
1 1/2 tsp salt
1/4 tsp pepper
4 chicken legs or 8 thighs

While you are preparing everything else, let the oven preheat to 425 and get a roasting pan lined with foil and sprayed with cooking spray (makes for easy clean-up!)

Mix up everything but the chicken in a little bowl, put the chicken in the roasting pan and brush with the glaze. Roast in the oven, brushing twice more with glaze, for 30-40 minutes, depending on the size of the pieces of chicken.

Serve with the vegetables described above and you will have a great winter meal!
