I'm a big fan of easy cooking. One of the easiest methods? No bake cooking (I have some fab easy no bake recipes)! In the summer, when it's hot, I prefer to cook on the grill as much as possible. Dessert usually consists of ice cream (love this protein-rich ice cream) or some other no-bake treat, because I really don't like to heat my oven up when it's already like an oven outside!

This twist on the classic cheesecake is a perfect recipe for those who like to prep & cook their meals on the weekends, those following the Trim Healthy Mama (or other low carb or low sugar) plan, or for those who are just looking for good ways to add protein and cut sugar from their diet.

While there is no cream cheese (a staple in cheesecakes!), this has all the creamy texture but absolutely no guilt - it's the perfect breakfast food. With a combination of strawberries and cottage cheese, your getting lots of health benefits from the berries and a power-packed punch of protein to keep your satisfied well into the afternoon. While it's not a true cheesecake, it will make you feel like you're having a special treat for breakfast!

Protein Packed Breakfast

The first thing you'll want to do for this no bake breakfast cheesecake is to grab my simple no bake pie crust recipe. But, instead of pressing it into a pie pan, you are going to sprinkle it into 6 small mason jars, creating our 'graham' style crust, for the bottom of our cheesecake.

Then it's time to set that aside and work on the filling. In the blender, you're going to combine 16 oz of strawberries and a 16 oz container of cottage cheese. Blend until it's a smooth consistency (I really love this Ninja blender - it whips things up in a flash). Depending on the sweetness of your berries, you can also add 1/4 cup xylitol and 2 scoops stevia along with a good splash of vanilla and blend it up again. Taste and sweeten a bit more, if needed.

The mixture at this point is runny. I like to add a tablespoon of gelatin mixed in 1/4 cup warm water (stir until dissolved) to make sure it thickens up nicely. Add the gelatin to the strawberry mixture and blend again, making sure it's incorporated.

Then pour the mixture into the 6 jars, over the no bake pie crust. Put the lids on and refrigerate overnight. In the morning you'll have a great no bake breakfast cheesecake! {for an even more decadent breakfast, top with a dollop of whipped cream.}

No Bake Breakfast Cheesecake Recipe

Serves: 6 servings

Ingredients

  • 1 no bake pie crust recipe
  • 16 oz fresh strawberries
  • 1- 16 oz container cottage cheese
  • 1/4 cup xylitol
  • 2 scoops stevia, optional
  • 1 teaspoon vanilla
  • 1 Tablespoon gelatin
  • 1/4 cup warm water

Instructions

  1. Make no bake pie crust recipe.
  2. Sprinkle pie crust mixture into 6 small mason jar and set aside.
  3. Add strawberries and cottage cheese to a blender and blend until smooth.
  4. Add xylitol and vanilla and taste for sweetness.
  5. Add stevia in small amounts, if necessary.
  6. Add gelatin to 1/4 cup warm water and stir to dissolve.
  7. Add to strawberry mixture in the blender and blend well.
  8. Pour the mixture over the no bake pie crust in the 6 mason jars.
  9. Add lids and refrigerate the jars overnight.
