Sweet treats for the Trim Healthy Mama!

Ice cream is one of my favorite summertime treats and, even with following the {that's an affiliate link -->} Trim Healthy Mama plan, I don't have to give it up! It's all about swapping out the not-so-great ingredients for better options. So instead of milk and sugar, we're using cottage cheese, almond milk, and xylitol. Yes, I said cottage cheese! You won't taste it but it adds a great boost of protein to your ice cream. No sugar highs & lows with this sweet treat! By replacing those high carb/high-fat ingredients you can have a treat that is low in sugar, carbs, and fat.

The basic recipe is very easy:

  • 1 cup cottage cheese
  • 1 cup unsweetened almond milk (you can replace this with heavy cream or coconut milk but that puts it in "S" territory)
  • 1/2 cup sweetener (I used {affiliate link -->} xylitol, so adjust accordingly if you are using another sweetener)
  • 1 tsp vanilla

It's very simple to make. First, you'll want to put the xylitol in a blender or magic bullet and grind it to a fine powder. Then add the remaining ingredients and blend until it's perfectly smooth. Give it a taste and add more vanilla if you like. For different flavors, this is where you would add your extracts or cocoa powder, being sure to blend until there are no lumps.

After that, put it in your ice cream machine and follow the directions for your machine. Mine took about 20 minutes to thicken. If you are adding any extra ingredients (like nuts, chocolate chips, or peanut butter) add it after the mixture begins to thicken (follow the manufacturers instructions for your ice cream machine).

When it's thickened, scrape it all into a freezer-safe container and freeze for at least 1 hour. After an hour you'll have a soft-serve consistency. It does get slightly harder the longer it stays in the freezer but melts quickly when served. This recipe makes 4 servings.

Ready to try some variations?

Mint Chip:(pictured above) Omit vanilla, adding 1/8 tsp mint extract and a good handful of stevia-sweetened chocolate chips. (You could also use skinny chocolate.)

Chocolate: Add 1/4-1/3 cup cocoa powder, depending on how 'dark' you like your chocolate flavor.

Chocolate Peanut Butter: Make the chocolate base and when it's time to add in your extra ingredients (check the instructions on your ice cream machine) add in a handful of chopped peanuts and a heaping tablespoon of slightly warmed peanut butter, drizzled slowly.

Chocolate almond: Make the chocolate base, adding 1/8 tsp almond extract. When it's in the ice cream machine and beginning to thicken, add a handful of chopped almonds.

Maple Walnut: Add 1/8 tsp maple extract to the base mixture (taste and add more if necessary). When it's in the ice cream machine and beginning to thicken, add a handful of chopped walnuts.

Is it "S" or "E"?

You will need to read the labels on your ingredients to make sure you stay within Trim Healthy Mama "S", "E", or "FP" guidelines, depending on your meal. The basic recipe is a "FP" if you're using low fat cottage cheese and dividing it into 4 servings. When you begin adding in extra ingredients you will have to look at the numbers and decide where it will fit into your overall meal plan.

Ingredients

  • 1/2 cup xylitol
  • 1 cup cottage cheese
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla, more if necessary

Instructions

  1. Put the xylitol in a blender and blend to a fine powder.
  2. Add the remaining ingredients and blend until smooth. (If you are adding in other extracts or cocoa powder, add them now and blend until smooth.)
  3. Taste and add more vanilla, if desired.
  4. Pour mixture into an ice cream machine, following the manufacturer's instructions.
  5. If you are adding extra ingredients (nuts, chocolate chips, etc.) add them according to the manufacturer's instructions for your ice cream machine.
  6. When it's thickened, scrape the mixture into a freezer-safe container and freeze for at least 1 hour.
  7. After 1 hour it will have a soft-serve consistency and will continue to harden slightly with prolonged freezing.
