Trim Healthy Mama No Bake Skinny Chocolate Custard

I love a good no bake recipe. They are usually easy to make and don't require heating up an oven. And if it's chocolate, even better! One of my favorite desserts is a decadent custard - rich and creamy with a deep chocolate flavor. I've played around with a few recipes and created this Trim Healthy Mama chocolate custard, which is very nice.

But I wanted something even easier, that didn't require oven baking or a water bath, which can feel like a lot of work (even though it's really worth it for such a great dessert!).

When I shared that recipe one of my readers alerted me to the idea of a no bake custard. Instead of a water bath, you use very hot liquid to 'cook' the eggs. I was intrigued by the idea, decided to try it out, and now I have my favorite custard recipe yet - my Trim Healthy Mama no bake skinny chocolate custard.

When I was first looking at no  bake custard recipes, I came across this recipe from the Pioneer Woman. I loved the idea and realized that it would be simple enough to make a sugar free version. And then I thought, why not try it with skinny chocolate?

No Bake Custard method

Skinny chocolate is a Trim Healthy Mama trademark - a combination of healthy coconut oil with some sugar-free sweetener and cocoa powder. Basically, it's a very simple way to create your own sugar-free chocolates without all the non-healthy sugar alternatives available today. Instead, you can use your choice of sweeteners (like xylitol, swerve, or erythritol) to create a healthy guilt-free chocolate.

You can certainly make this recipe with sugar-free chocolate chips but I like to save money and make my own healthy dark chocolate to use in this recipe. And, if you’re especially lazy, there’s no need to let the chocolate harden first, though you will want to let it cool so it doesn’t scramble your eggs!

Besides your chocolate, all you need are a few eggs and hot coffee, hot cream (or half-and-half) or a mixture of both. Make sure your eggs are at room temperature. If not, they will cool the coconut oil and you’ll get a lumpy chocolate mixture in the bottom of your blender under the hot liquid.

Trim Healthy Mama No Bake Skinny Chocolate Custar Recipe

Serves: 4-6 servings

Ingredients

  • 1 recipe skinny chocolate
  • 2 eggs, room temperature
  • pinch of salt
  • ½ cup hot liquid (coffee, cream, or both)

Instructions

  1. Make the skinny chocolate and cool slightly.
  2. Add the chocolate mixture, a pinch of salt, and eggs to a blender.
  3. Blend well, until fully combined.
  4. Turn the blender on with the pour spout open, and slowly add the hot liquid, blending well.
  5. Pour the mixture into 4 - 6 small ramekins.
  6. Place on a tray and cover with plastic wrap.
  7. Refrigerate at least 2 hours, until firm.
  8. Enjoy!
