BLT Pasta Salad

I absolutely love it when I can turn a classic Sandwich into a pasta salad. A BLT is a classic everywhere, albeit, very seldom is it made the same way everywhere. This salad will have all the flavor of a good BLT.

Of course, me being me, I had to add in my own special little touches. So do not be too surprised when you see them. Actually, I should say, do not be afraid to make it according to the recipe, wait to see. You will absolutely love it as much as I do.

What makes the BLT a great sandwich? The dressing of course.

With this pasta salad I combined the mayonnaise with Ranch seasoning. Yes, ranch! It adds special seasonings that bring a special zest to this pasta.

            What pasta should I use for this pasta dish?

Any type of pasta will work for this dish. The smaller shells, or elbow macaroni will hold the dressing in the pasta so that you can get a taste of everything in each bite.

            Should I chill before serving this dish?

This is based on the classic BLT sandwich, which is eaten when the bacon is warm. This pasta dish can be eaten right after making it, or you can chill it in the refrigerator for a couple of hours if you want it completely cold.

            Should I rinse the pasta after draining?

If you are making a pasta dish that is supposed to be eaten hot or warm, you should not rinse the pasta. However, if you are making pasta for a cold pasta salad, then you should definitely rinse the pasta. Pasta has starch in it, this makes the pasta stick to each other. A cold salad you do not want that starch and sticking noodles.

            Can I store leftovers?

You could keep the leftovers in an airtight container for 2 days in the refrigerator. I do not recommend trying to freeze this as the yogurt and mayonnaise will separate when thawing.

            Can I add more mayonnaise the next day?

If your pasta seems to be a little dry the next day when you want to have some, you can add up to ½ cup of mayonnaise to moisten the pasta salad.

What do you need to make BLT Pasta Salad

            3 cups of cooked macaroni, I use shells

            2 cups baby tomatoes, sliced

            4 slices of cooked and crumbled bacon.

            1 cup green onions

            2 tsp apple cider vinegar

            1 tsp sugar

            ½ cup fat free mayonnaise

            ⅓ cup plain Greek yogurt

            2 tbsp Ranch seasoning

            1 tbsp dijon mustard

            1 tsp Worcestershire

            Salt and pepper to taste

How to make BLT Pasta Salad

FIRST STEP:

Cook the pasta according to the directions on the package

In a large bowl combine the bacon, sliced tomatoes, pasta and green onions

SECOND STEP:

Toss to mix up the ingredients

In a small bowl whisk together the mayonnaise, ranch seasoning, salt and pepper, vinegar, sugar, greek yogurt, Worcestershire sauce and dijon mustard

Add this mixture to the pasta mixture

Stir to combine and coat all

Chill for at least one hour before serving.
