Breadless Cucumber Submarine Sandwiches

            Many of us are searching for Low Carb recipes to not only help us with weight loss goals, but to also eat healthier. If you are like me, you love a nice Submarine Sandwich. I load mine with vegetables and Turkey or Chicken. The problem is I still have too many carbs, so I had to think of something.

            How about a sub sandwich without the heavy bread? I came across quite a few options for making them this way. After testing the multiple versions, I settled for this method. This sub is cool, refreshing, crunchy and delicious! I can guarantee these are light!

            The best part is that these are super quick to make, healthier and taste great. They can be made with deli meats or just vegetables.  These are so easily customizable and you need not worry about heating the house with the oven for a great meal.

These cucumber sandwiches make a great meal.  They are low in calories, high in flavor. These could become your favorite summertime food.

Frequently Asked Questions:

            Will the ‘sandwich’ stay together?

There should be no reason it doesn’t. If you are referring to the Cucumber halves sliding, that may take place, use toothpicks to help hold them together.

            Can I use any Sandwich makings?

Anything you would use to make a Submarine Sandwich with bread can be put on a cucumber sub sandwich.

            Can I use Light mayo on the sandwich?

Of course you can! Anything you like is acceptable. This also cuts the calories by using light. To be perfectly honest, you could swap out the mayonnaise altogether and use pesto, sour cream, yogurt or even make some fresh hummus.

            Can I add other ingredients?

You are welcome to add any other ingredients you would like. I generally do black olives, pickles and some spinach.

What do you need to make Breadless Cucumber Submarine Sandwiches

            2 large cucumbers, sliced lengthwise  and seeds scooped out. Ends cut off also.

            6 to 8 tsp mayo or a healthier substitute such as hummus or yogurt

            3 Roma tomatoes, sliced

            1 cup shredded lettuce

            4 ounces sliced deli Turkey

            4 slices cheese, Provolone or American, or Swiss

How to make Breadless Cucumber Submarine Sandwiches

FIRST STEP:

Slice the cucumbers lengthwise, cut the ends off

Scoop out the seeds of the cucumber

SECOND STEP:

Cut the cucumbers in half again to make sandwich size

Spread 1 to 1 ½ tsp mayonnaise or other choice in each side of the cucumber

THIRD STEP:

In the top half of each Cucumber ‘sandwich’ place shredded lettuce, sliced Roma tomato, a slice of cheese cut in half and also ¼ of the chosen meat.

With another slice of the meat, roll it and put it into the other half of each cucumber sandwich.

FOURTH STEP:

Place this half on the top of the other half

Continue until the cucumber halves are all used.

You should have 4 cucumber sub sandwiches
