Broccoli Cheese Balls

            Broccoli Cheese balls make a great appetizer or finger food for family gatherings, parties, sports events or any celebration. They are not difficult to make, taste great and are tops on everyone’s wish list for appetizers.

They also make a perfect way of getting your kids to eat more vegetables without thinking of them as healthy.

            Each ball is made of broccoli pieces, three types of cheese and a crispy Panko bread coating. You can add in a sprinkle of red pepper flakes if you want to give them a slight bite. It is best to make these cheese balls a short time in advance. They do need to sit in the refrigerator for approximately half an hour.

            You could probably find many variations for these balls. There are many ways to make them as far as which vegetables to use. That choice is up to you. This recipe just states the simplest one and it tastes great too!

            Could I change it and use Cauliflower?

You certainly could! You could make a mix of both cauliflower and broccoli and double whammy the vegetables for the kids.

            How do I store these?

If there are any left, they can be placed into the refrigerator in an airtight container for up to 3 days.

            How do I reheat these?

The easiest and best way would be to use an air fryer for a minute or two or place them in the microwave and heat for 30 seconds or less, just until hot.

What do you need to make Broccoli Cheese Balls

            1 ½ cups broccoli florets, heaping and chopped well

            1 cup Colby Cheese, shredded

            1 cup Cheddar Cheese, shredded

            4 ounces of Velveeta cheese, cut into small pieces

            ½ tsp or less of red pepper flakes

            2 ¼ cup Panko bread crumbs

            3 eggs, lightly beaten, divided 2+1

            ½ cup flour

            Oil for frying

How to make Broccoli Cheese Balls

FIRST STEP:

Heat up the oil to a temperature of 375*, use a thermometer to keep temp steady

Make sure the broccoli has been steamed, then chopped into fine pieces

SECOND STEP:

Place them into a large bowl and add the cheese into the bowl along with the Panko bread crumbs, red pepper flakes and one egg.

Stir well to combine all ingredients

THIRD STEP:

Use your hands to scoop approximately 1 tbsp of the mix and roll into a ball.

Set these on a parchment lined baking sheet

FOURTH STEP:

Place into the refrigerator and chill for at least 30 minutes.

In a shallow dish, place the flour

In another small dish, beat the two eggs

In a third bowl, place 2 cups of Panko breading mix

FIFTH STEP:

Heat the oil to 375*

Remove the broccoli balls from the refrigerator and roll first into the flour, then into the egg and finally into the Panko breading mix

SIXTH STEP:

Fry up to 4 Broccoli Cheese balls at a time.

Cook until all sides are browned

Continue until all balls are cooked.

Place them on a paper towel lined plate when removing from the oil

Serve plain or with your choice of dipping sauces
