Carrot Cake Cheesecake Bites

A combination of two classic desserts. Two of America’s favorites. This little treat is the perfect way to welcome in the fall weather, without saying goodbye to summer yet. The classic flavor of carrot cake combined into a bite of cheesecake. The world just became my happy place again.

There are just a few ingredients you will need for this nifty treat. It is a colorful treat, it is tasty, it is creamy and it is decadent.

I am sure that you are wondering how a dessert this fancy looking can be so easy to make. Well once you heat treat the dry cake mix, all you will need to do is beat it into the cream cheese and roll it into balls.

Then you will use white chocolate candy melts to coat the carrot cheesecake balls in.

Frequently Asked Questions:

            Can I use a cake flavor other than carrot?

I would imagine any type of cake mix will taste delicious in the recipe. Red Velvet, chocolate or Apple Spice. Feel free to use your imagination and experiment with different ones.

            Can I add raisins to the mix?

That is a possibility. I have not tried this myself, let me know how it turns out.

            Can I use a different chocolate melt?

For the coating you can use whatever flavor or color you would like. This recipe is specifically for a fall inspired carrot cake cheesecake. Chocolate, white chocolate, any type you can find and would like to try, please do.

            What is a heat treat?

The cake mix should be heat treated before it is added to the cream cheese. This means that you will place the dry cake mix into a microwave safe bowl and heat it for 30 seconds and then stir. Heat once more for 30 seconds and stir again. The dry mix should be left to cool completely before combining with the cream cheese.

            How do I store these treats?

These cheesecake bites should always remain in the refrigerator until being served. Keep them in an airtight container.

What do you need to make Carrot Cake Cheesecake Bites

            1 box dry Carrot Cake mix

            8 ounces Cream Cheese, at room temp

            12 ounces of white chocolate, Candy melts or chips

            4 ounces orange candy melts

FIRST STEP:

Heat treat the dry cake mix as directed above and allow to cool completely

Beat the cream cheese until it is creamy and free of lumps

SECOND STEP:

When the dry cake mix is completely cooled, sprinkle it over the cream cheese and beat until it is combined fully

Cover the bowl tightly with plastic film and refrigerate for at least two hours

After two hours, use a small cookie scoop to form balls of the cheesecake mix and place on a tray lined with parchment paper

Melt the white chocolate in the microwave on 30 second intervals, stirring after each until completely smooth

THIRD STEP:

Using a fork or skewer, dip the cheesecake ball into the white chocolate and set each on a parchment lined cookie tray

Melt the orange candy melts in the microwave on 30 second intervals until smooth, stirring each time

FOURTH STEP:

Use a spoon to drizzle the orange candy melts over the white covered cheesecake balls
