Cheesy Hamburger Potato Casserole

            This is a classic comfort food. The perfect meal to end a hectic day of work or school. Some people may actually consider this to be a form of potatoes Au Gratin.

In a sense it is, but this is so much better! When life is so busy, we need to find meals that fit our lifestyles and routines. Considering that I feel like a taxi for half of my day, I needed a meal that I could place in the oven and let it cook while I pick the kids up from school or other sports activities.

            This dish is the perfect one. It is almost a complete meal in one dish. However, being me, I do also make a vegetable dish to go on the side.

I like having a salad or cucumber and tomato salad. But, I have been known to roast carrots, broccoli and cauliflower to serve alongside the Cheesy hamburger potatoes.

Frequently Asked Questions:

            Could I add a vegetable to the dish?

I have not done so, as of yet. However, when you do try this, please let me know which vegetable works best to bake inside this casserole. I just cannot make up my mind.

            Could I use chicken instead of ground beef?

Certainly! I think that would taste delightful. It would most definitely work for my family who loves to eat chicken.

            Can I use a blended cheese instead of Cheddar?

To be honest, I love to use a Monterey Jack Cheese blend, or even a Colby Jack blend of cheese. However, if I do not have either of those available, and I refuse to drive to the store for just cheese, I will use a Mexican blend cheese in this dish. It is a light enough flavor that it is not overpowering in any way.

What do you need to make Cheesy Hamburger Potato Casserole

            1 pound crumbled ground beef

            1 yellow onion, diced

            3 to 4 pounds of potatoes, peeled and sliced

            8 ounces, or more Cheddar Cheese, shredded

            1 can Cheddar Cheese soup mix

            12 ounces evaporated milk, or whole milk

            ½ cup milk

            1 tsp salt

            ½ tsp pepper

 

How to make Cheesy Hamburger Potato Casserole

FIRST STEP:

Preheat the oven to 350*

Spray a 9×13 baking dish with a non stick cooking spray

SECOND STEP:

In a large skillet, add the onion and ground beef and cook until the meat is done

Slice the potatoes to about ¼” slices

THIRD STEP:

Add one layer of potatoes to the bottom of the baking pan

Sprinkle with salt and pepper

Top with approximately ⅓ of the meat mixture and spread evenly over the potatoes

Sprinkle with ⅓ of the shredded cheese

FOURTH STEP:

Repeat this two more times in layers

The last layer should be the remaining cheese

FIFTH STEP:

In a bowl, combine the Cheddar cheese soup mix, the milk and the evaporated milk, with optional salt and pepper if desired

SIXTH STEP:

Pour the soup mix over the top of the potatoes and beef mixture

SEVENTH STEP:

Cover the baking pan tightly with aluminum foil and place in the oven

Bake for one hour

Remove the foil and bake for an additional 15 minutes to get a golden topping on the cheese.

If the potatoes are thicker, you will need to bake the dish longer
