Many of you know that I am not a big fan of seafood, but, like all good parents, I include seafood at least once a week into our dinner menus. I do believe it is a good idea to let kids see their adults eating some stuff they may not be a fan of. It just teaches them small lessons without making it obvious. In other words, let them see that people do things they do not necessarily want to do. Besides, I do tend to sneak vegetables into foods that they do not know about.
This Cheesy Shrimp Alfredo Tortellini is one meal that you will not want to forget about. So creamy, cheesy, delicious. Yes, I said it was delicious. If I could have more recipes like these I would be happy. This recipe gives you perfect Tortellini and super tender shrimp in a savory sauce. I generally serve this dish with a caesar salad or strawberry kale salad.
With this dish, I combined two of my daughters favorite foods. She loves Alfredo sauce over any pasta, and she also loves shrimp scampi. So by mixing the two together, it satisfies her taste buds and actually made me think twice about seafood.
By combining the two dishes, you would think my kitchen looked like a hurricane had hit. I actually used just one skillet for this entire dish.

What do you need to make Cheesy Shrimp Tortellini Alfredo Skillet
1 pound large shrimp, deveined and peeled
1 package cheese tortellini
1 tomato diced
3 tbsp butter
2 leaves of Basil
2 cloves garlic, minced
1 tbsp all purpose flour
½ cup parmesan cheese, shredded
½ cup heavy cream
Salt and pepper, (optional)
How to make Cheesy Shrimp Tortellini Alfredo Skillet
FIRST STEP:
In a skillet, melt the butter
Place the shrimp into the butter
SECOND STEP:
Cook for 2 to 4 minutes, until the shrimp are no longer translucent
Add in the diced tomato, the minced garlic, salt and pepper and the basil
THIRD STEP:
Stir to combine well
Saute for 1 to 2 minutes
Add the flour and stir
FOURTH STEP:
Add in the heavy cream and stir while it thickens
Stir in the parmesan cheese
FIFTH STEP:
Add in the cheese tortellini and stir well to coat.
Simmer until heated through.
Garnish with fresh chopped parsley and more shredded Parmesan
