Chicken Alfredo Lasagna Rollups

         Being who I am, I always look for classic recipes that I can somehow change into an easy weeknight meal. My family loves the classics, the comfort foods, but like everyone, we get tired of eating the same thing all the time. As the cook, it is my job to reinvent recipes to prevent boredom. When I fell in love with the lasagna roll ups, I just knew that I would have to do the same with our beloved Chicken Alfredo. I did worry if it would turn out just as good, but you will not know until you try it.

            I am so thrilled with the way this comes out! I also love being able to take just one serving out at a time. With the regular chicken alfredo, serving size is never consistent for me.

Now that I have started to make these rolled up Chicken Alfredo, it is not a difficult thing to limit myself. Mind you, limiting myself is not an easy task! They may look different, but they taste the same if not better.

Creamy alfredo sauce, parmesan and mozzarella cheese, juicy chicken, they are better than any restaurant I have had! I like to double the batch and freeze one for another meal in the future. We eat leftovers for lunch during the week.

            Can I make this ahead?

You can! You can prepare them to the point of baking and then put them into an airtight container and freeze them. You can also make them ahead of time, do not bake, cover tightly and keep in the refrigerator overnight. Allow to warm up a little before baking or add an extra 15 minutes to the baking time.

            Is Alfredo sauce hard to make?

No, it is not difficult. In a saucepan, melt the butter. Then add the heavy whipping cream and the cream cheese. Cook over medium heat until the cheese is melted, stirring with a whisk. Add in the seasonings, and whisk until smooth. Add the grated Parmesan cheese, whisking until the mixture begins to thicken.

            What do I serve with this dish?

You could serve a side salad, crispy dinner roll, steamed or roasted vegetables.

            3 cups chicken, shredded

            ½ tsp garlic powder

            1 tsp Italian seasoning

            Salt and pepper to taste

            3 cups of Mozzarella cheese, shredded

            9 cooked lasagna noodles

How to make Chicken Alfredo Lasagna Rollups

FIRST STEP:

Preheat the oven to 350*

Lay the cooked lasagna noodles on a piece of parchment paper

SECOND STEP:

In a mixing bowl, combine the chicken, ⅓ cup of Alfredo Sauce, seasonings and 1 cup of mozzarella cheese.

Combine by stirring well.

Spread ⅓ cup of Alfredo sauce at the bottom of a 9×13 baking pan

THIRD STEP:

Spread some of the filling mix onto each lasagna noodle

Roll each noodle from the short end and place seam side down into the baking pan

Top each roll with some of the remaining filling mixture and the remainder of the mozzarella cheese.

Garnish with fresh chopped parsley and serve.
