Chicken Avocado Salad

For me, there is no right or wrong time to have chicken salad. The odd thing is, there are so many variations for the same thing. This truly makes it difficult when you really want chicken salad, but you are looking everywhere for the perfect recipe, until you give up and make something different.

Having a chicken salad around like this when I was younger may have saved me the work of losing weight now. This is so flavorful, it is actually a joy to eat this. And since it can be eaten in so many ways, that makes it even better. I can toss this into a single serving bowl and take it on the run at any time. It makes a great meal for busy evenings also.

This is the recipe to keep at the front of your recipe file. Once you try this, there will never be another chicken salad that even comes close to this. There is no mayonnaise in this salad, but trust me, you are not going to miss it at all. As I mentioned a million times, at my house we are trying to lose some weight. This chicken salad is perfect for a healthy lunch or even a dinner.

This is a versatile type of chicken salad that does not mandate one way or another. If you enjoy chicken salad, go ahead and make a yummy sandwich. If you are avoiding carbs, use lettuce, cabbage or carb free tortillas.

Do I have to use Avocado?

I highly advise using it. The avocado is the moisture that is replacing the mayo.

Cilantro is too strong for me, what can I use?

I can fully understand this, you can replace the cilantro with dill or even parsley.   

Is this a sandwich spread or salad?

That is the best part! You can use it in a pita as a sandwich, use a lettuce leaf as a wrap or place a big spoonful on a bed of lettuce for a quick side salad.

What do you need to make Chicken Avocado Salad

            1 small rotisserie chicken, chopped or shredded

            2 large avocados, peeled and sliced into bite sized pieces

            1 can fire roasted corn

            ½ cup chopped green onion

            6 slices bacon, cooked

Lemon Dressing:

            3 tbsp fresh lemon juice

            3 tbsp extra virgin olive oil

            1 tsp sea salt, to taste

            Black pepper to taste

How to make Chicken Avocado Salad

FIRST STEP:

Chop or shred the rotisserie chicken

Peel and remove the seed from both avocados

SECOND STEP:

Slice the avocados into bite sized pieces

Cook the bacon, allow it to cool slightly and then crumble the bacon

THIRD STEP:

Add the chicken to a bowl

Add the Avocados to the chicken

Add in the corn, cooked, but cooled

FOURTH STEP:

Add in the green onion and the crumbled bacon

Stir to combine and blend well.

FIFTH STEP:

In a small bowl combine the lemon juice, olive oil, salt and pepper

Whisk together and pour over the chicken

SIXTH STEP:

Place desired amount in a pita pocket, on a lettuce leaf and roll, or placed on a lettuce leaf on the plate, using a large ice cream scoop
