                        Casserole, hotdish, is there really a difference? Not at all! It just depends on what part of the country you are from. Well this Chicken with Spinach casserole is going to become your family favorite for years to come.

I realize it is difficult to get kids to eat spinach, adults too. This casserole does the hard part for you! They will be asking for seconds!

            What do I love about this dish? It is low carb, which fits in perfectly with my resolution to lose weight! I did finally convince a certain other person to join me, she was not happy at first, but has turned into my biggest motivator. This dish earned five stars also from the whole family!

There is no way to go wrong with juicy pieces of chicken smothered in a creamy cheddar cheese sauce and mixed with spinach. The flavor is just beyond belief and that of course helps if you need to eat low carb!

            What should I serve with this?

This casserole makes a perfect one pan meal. However, it can easily be served alongside some roasted vegetables or even steamed green beans.

            Can I keep the leftovers?

The remaining casserole should be cooled completely, wrapped tightly with foil or plastic film and then placed into the refrigerator for up to 3 days.

            Can this casserole be frozen?

This is not one of those casseroles that I recommend being frozen for a later time. The sauce will not be the same delicious and creamy texture as it is before freezing.

            Could I use Kale or cabbage?

Yes, you could, just be very aware that the flavors will be nowhere near the same.

What do you need to make Chicken with Spinach Casserole

1 cup Italian Salad Dressing, optional more

¾ tsp garlic powder

½ tsp lemon pepper

½ cup fresh chives

1/4 cup Olive Oil

2 cups Chicken, cooked and cubed

¾ tsp minced garlic

1 cup Mozzarella Cheese

16 ounces cream cheese, room temperature

2 cups Chicken Broth

How to make Chicken with Spinach Casserole

FIRST STEP:

Preheat the oven to 375*, when ready

In a large bowl place the chicken cubes

Pour the Italian Dressing over the chicken

SECOND STEP:

Place in the refrigerator and marinate for 2 to 3 hours

Drain the Italian dressing from the chicken

THIRD STEP:

Season the chicken with lemon pepper and the garlic powder

Place the chicken into a prepared baking dish

Layer the spinach over the chicken

FOURTH STEP:

In a large bowl, add in the cream cheese, salt and pepper, olive oil and chives

Slowly add in the chicken broth while stirring

Stir to combine well, until it is a smooth pourable

FIFTH STEP:

Pour evenly over the spinach and the chicken

Cover with a layer of aluminum foil and place in the preheated oven

SIXTH STEP:

Bake for 20 minutes, then remove from the oven and remove the foil

Sprinkle the shredded cheese over the top

SEVENTH STEP:

Return to the oven and bake for another 15 to 20 minutes

The cheese should be a light golden brown and bubbly

Serve immediately with a side of choice and a slice of crusty bread to soak up the cheese sauce.
