What an ideal version of one of my favorite take out foods! I have looked for a perfect duplicate of the Chinese takeout for a very long time. It took a bit, but with a couple small bits of change, I did finally find one that is perfect. I can throw it together in the morning and let the crockpot do the cooking for me. The Crockpot or slowCooker is like my favorite appliance, if you can’t tell.
I fell in love with lo mein so many years ago because of the savory flavor of the sauce. This is not a sauce that is easy to duplicate, at all!! It has a slight sweet taste, yet the sriracha gives it the perfect kick. I used to wonder what the difference was between lo mein noodles and chow mein noodles. It took many years before I realized they are basically the same thing, just prepared differently.
And, I am even sure you are wondering why I am doing this in the crockpot, Lo mein is simply a stirfry type of food and has no reason to be in the crock pot. Simply, the chicken is cooking in the sauce and that alone is worth its weight in gold.
It comes out juicy, flavorful and perfect. Besides, using the crockpot is always a big help when you have a busy life. There is no time to spend forever in the kitchen slaving over a hot stove when you have these cool appliances to do the work for you.
Frequently Asked Questions:
Do I have to use the Crockpot?
Of course not, but I love the flavor the chicken has when cooked in the sauce within the crockpot.
What type of noodles should I be using?
Technically for authenticity, it should be Chinese egg noodles. Those can be difficult to locate though. I have been known to use dried Ramen noodles, Chow mein noodles or if desperate for Chinese food, I will break up some spaghetti noodles.
