Crunchy Parmesan Potato Bites

These Crunchy Parmesan Potato Bites make a perfect snack or a great side dish for almost any meal. I need to emphasize that the Parmesan used for this recipe is not just any parmesan.

This is sold in the refrigerated section of your market. It is already grated, which will save you time. However, this is the Parmesan that will make these bites what they are. The regular Parmesan that is sold in the pasta aisle will not be the same.

I usually slice my potatoes for this dish, but you could quarter the potatoes and have them more like Steak Fries, or you could cut them into chunks and that would be fabulous also.

These are the perfect accompaniment for freshly grilled steaks or chicken on the grill.

            What type of potato is best for this recipe?

I prefer to use reds or Yukon Gold. A nice Russet works also, but will take longer to bake or roast.

            How do I store these?

Once cooled, they can be placed into an airtight container and then into the refrigerator for up to 4 days.

            Can I freeze these?

Certainly! Again, once they have completely cooled, place them in a freezer safe bag or an airtight container. They can be left in the freezer for up to 3 months.

What do you need to make Crunchy Parmesan Potato Bites

            4 mid sized Potatoes, Yukon Gold is my preference, washed but Do Not Peel

            ½ tsp Garlic Powder

            ½ tsp Onion Powder

            ¼ tsp ground black pepper

            ¼ tsp salt

            4 tbsp Olive Oil

            ½ tsp Parsley

            4 tbsp Parmesan Cheese, freshly grated or bought from the refrigerated Section, DIVIDED

How to make Crunchy Parmesan Potato Bites

FIRST STEP:

Preheat oven to 450*

Line a baking tray with parchment paper

Slice the washed, unpeeled potatoes to a ¼” thickness or into eighths lengthwise for steakfries.

SECOND STEP:

In a boil place the Olive oil and coat the slices of potatoes

In another bowl add the Garlic Powder, onion Powder, Black Pepper, Salt and the Parsley.

Mix in half of the Parmesan Cheese

THIRD STEP:

Toss the Potato Slices in the seasoning and coat evenly

FOURTH STEP:

Bake for 15 minutes, remove from the oven and flip the potatoes

Bake for another 15 minutes

FIFTH STEP:

Remove from the oven and sprinkle with the remaining Parmesan Cheese

Place under a broiler set on low for 2 to 4 minutes, until the cheese begins to bubble and turn brown
