Dark Mocha Crinkle Cookies

            A simple yet tasty twist on the chocolate crinkle cookie. This cookie is great to have at coffee time with the ladies, or make a plate for the men on game day. I do love the way crinkle cookies look. They are so pretty!

            One thing that I have learned about these cookies is that it will not make a difference if you chill the dough or don’t. They bake up the same way. So without chilling, I get them baked and I am out of the kitchen quicker.

            I have also become a fanatic about sifting my dry ingredients together. I guess you could say that I learned the hard way.

I made a batch of cookies when I was in a rush one day, I did not sift the flour and I had lumps of flour in a bunch of the cookies. That was rather gross.

When a recipe calls for cocoa, I always, always use unsweetened cocoa. I like being able to control the amount of sweetness in our cookies.

These cookies can be placed in an airtight container or in zip-loc bags and they will stay fresh for up to a week at room temperature.

            Can I freeze these cookies?

It is best to freeze these on a tray so that they are individually frozen. Once frozen you can wrap them or place them in a freezer bag. They will last in the freezer for up to three months this way. I love to keep some of these cookies in the freezer at all times. You never know when that chocolate craving is going to sneak up on you. I figure it is best to be safe than not have it when I want it.

1 cup butter, at room temperature and unsalted

¾ cup dark brown sugar

¼ granulated sugar

¼ cup instant coffee

2 tsp vanilla

2 cups of flour

2/3 cup unsweetened cocoa

2 large eggs, room temperature

1 tsp baking soda

¼ cup sugar for rolling

How to make Dark Mocha Crinkle Cookies

FIRST STEP:

Preheat the oven to 350*

In a medium bowl, combine the butter, brown sugar, granulated sugar

SECOND STEP:

Beat until well combined and fluffy

Beat in the eggs and the vanilla until it is combined thoroughly

THIRD STEP:

Adding a little at a time, gradually mix in the dry ingredients

Using a small scoop, scoop out one tablespoon of dough and roll it into a ball

FOURTH STEP:

Roll the ball into sugar and set on a tray lined with parchment paper

Continue until all dough is used

Using your thumb, make an indent into the center of each ball

Bake for 8 to 10 minutes
