Ding Dong Cake

            Yes, this is one of those copycat recipes that I just had to try. It looked like it would be so much fun to make and eat that I could not resist the urge. Besides, who does not like chocolate and whipped topping?

I remember growing up and helping Mom pack Dad’s lunch for work, she always had a hidden stash of treats that she would slip into the lunch box for him. These treats were hidden from the kids because Dad would not get any for his lunch if we knew where they were.

            This recipe is actually quite simple to make. It may look difficult, but it all matters how you see it. Trust me, easier than pie! Not only will this cake look like a ding dong, it tastes just like them also. 

This likely has many variations out there that you could try, however, I did make this one as easy as possible and also made it to taste just like a Ding Dong.

It will look like an oversized Ding Dong, complete with a chocolate coating.

            How do I store this dessert?

The cake should be kept in the refrigerator when it is not being served. This is due to the dairy that the filling is made of.

            Can I freeze this cake?

You could wrap slices of the cake separately and store them in the freezer. Allow them to thaw overnight in the refrigerator before serving.

            Should I use round cake pans?

You could use round pans or square pans. Either way this will come out looking like a gigantic Ding Dong.

What do you need to make Ding Dong Cake 

            Cake:

                        ½ cup butter, softened and unsalted

                        1 ½ cups granulated sugar

                        2 large eggs

                        1 ½ cups all purpose flour

                        ½ cup unsweetened cocoa powder

                        1 tsp baking soda

                        ½ tsp salt

                        ½ tsp baking powder

                        ½ cup strong brewed coffee, cooled

                        ½ cup milk

            Cream:

                        5 tbsp all purpose flour

                        1 cup milk

                        1 tsp vanilla

                        1 cup butter, unsalted and at room temperature

                        1 cup granulated sugar

            Ganache:

                        12 ounces semi sweet chocolate baking chips

                        1 ¼ cups heavy whipping cream

How to make Ding Dong Cake

FIRST STEP:

Spray two 9 inch cakes pans, rounds or squares will work.

Preheat the oven to 350*

SECOND STEP:

In a bowl, combine the flour, cocoa, salt, baking soda and baking powder, whisk together to combine.

In a cup, combine the cold coffee and the milk, set to the side

In a large mixing bowl, beat the butter and granulated sugar for 5 minutes. Beat in the eggs, one at a time.

THIRD STEP:

Slowly add in the dry ingredients and continue mixing while alternating with the cooled coffee and milk

Once all the ingredients are added, beat the cake mix for about 2 to 3 minutes until it is fluffy

FOURTH STEP:

Divide the cake batter between the two pans, evenly

Bake for 20 to 25 minutes, until a toothpick comes out clean

Set to the side to cool when done baking.

FIFTH STEP:

In a small saucepan, combine the flour with the milk, whisking until there are no lumps.

Turn on medium heat and continue to whisk until the mixture becomes thick like pudding.

Remove from the heat and stir in the vanilla

Cool completely

SIXTH STEP:

In a mixing bowl, combine the butter and sugar, beat until light and fluffy. Slowly add in the cooled milk mixture, beating until it is combined.

(Note: it may appear to curdle at the beginning, with continued beating, it will become whipped topping)

SEVENTH STEP:

Pour the heavy cream into a microwave safe bowl and stir in the chocolate chips.

Heat on 30 second intervals until the chocolate pieces are melted

EIGHTH STEP:

Place one cake layer on a serving plate

Cover with the entire amount of whipped topping mix

NINETH STEP:

Place the second cake gently on top

Slowly pour the ganache over the cake, use an offset spatula to spread across the top and down the sides

YAY!

Let sit for 15 minutes to harden, then slice and eat!
