Easter Egg Fruit Pizzas

            What a great little treat for Easter! The little ones are going to love this idea! These little treats are egg shaped sugar cookies topped with a smooth cream cheese frosting and then fruit.

These will certainly be the extra special treat this year at your dining table.

            The beautiful colors of the fruit topping against the white background just makes the fruit POP! It is a healthier treat, and will fit nicely on the table next to the decorated eggs, carrot cake, or the coconut cakes that have been popular for as long as I can remember.

            What makes this one fun is that the kids can help to decorate these cookies. Just as with the eggs, it is almost guaranteed that no two will be alike.

            Could I use pie crust instead?

I do not see why not. Except the crust would not be as sturdy as the cookie base.

            What fruits should I use?

Well, fruits that are in season are the best. I suppose you could look for fruits that are somewhat pastel colored, or colors you think of for Easter and Spring.

            Do I have to use cream cheese frosting?

Of course not! You could use a basic white frosting if you choose, Add some yellow food coloring for yellow. Or make up a larger batch and divide the frosting so you can make your own pastel colors for each of the cookie pizzas.

What do you need to make Easter Egg Fruit Pizzas

            1 package ready made sugar cookie dough

            8 ounces cream cheese softened

            6 tbsp softened

            2 cups powdered sugar

            Pinch of salt

            1 tsp vanilla

            Assorted Fruits: strawberries, blackberries, blueberries, mandarin oranges, kiwi and raspberries

How to make Easter Egg Fruit Pizzas

FIRST STEP:

Preheat the oven to 350*

Roll the cookie dough to no more than ¼ inch thick

Using an oval cookie cutter, cut the egg shapes out of the dough and place on a baking tray lined with parchment paper

SECOND STEP:

Bake until the cookies are lightly browned on the edges

Remove and allow to cool before setting them on a rack

THIRD STEP:

For the frosting, place the cream cheese in a bowl and add the butter, mix until the combination is smooth and fluffy

Gradually begin adding the powdered sugar, only enough to desired thickness
