Easy Burrito Casserole

         A delicious beef loaded casserole covered with cheese and all the flavor that a burrito is supposed to have. This is the dish you will always call a crowd pleaser, the family, especially the kids are going to love it.

This burrito casserole is a great dish to bring with you to a potluck for church or even a family gathering.

This baked burrito casserole is what Mexican food should taste like when it is authentic. So you know this is a great recipe! As a deep dish casserole, it is perfect because it is a one dish meal and super easy to make.

Remember if your family enjoys the heat in their Mexican dishes, feel free to add the heat in the recipe. I have not added much in my recipe.

            Can I use whole wheat tortillas?

You can use plain, wheat spinach or even tomato. Whichever tortilla brings you the most flavor is what you should use.

            Do I have to use ground beef?

Of course not! If you want to use venison, sausage or even chicken please do so. I prefer you to make the recipe your own.

            Can I add some chopped or diced vegetables?

Feel free to sneak in some vegetables that your kids will not realize they are eating. I generally will shred some carrots, chop some spinach and dice up a couple of Roma tomatoes.

            What should I serve this casserole with?

In my household, I always make a pan full of Mexican fried rice to place alongside the square of Burrito Casserole. I also place sides of salsa, sour cream, tomatoes and more chilis on the side for those who like to add more to their casserole.

What do you need to make Easy Burrito Casserole

            1 16 ounce can of refried beans

            1 14 ounce can of whole kernel corn, drained

            1 ½ pounds of ground beef, or choice of meat

            1 package taco seasoning mix

            1 can enchilada sauce

            1 smaller can of green chilis

            8 large tortillas, your choice, cut in half

            2 cups Fiesta blend cheese, shredded

            Green onions, chopped for garnish

How to make Easy Burrito Casserole

FIRST STEP:

Preheat the oven to 350*

Brown the ground beef in a large skillet

SECOND STEP:

Add in the taco seasoning and simmer for a few minutes

Stir in the enchilada sauce, the refried beans, the corn and the small can of green chilis

THIRD STEP:

Stir to combine well and simmer for a few more minutes to heat through

FOURTH STEP:

In a 9×13 baking pan, grease the bottom well, then place four of the cut tortillas to cover the bottom of the pan

Top the first layer of tortillas with half of the meat mixture and half of the shredded cheese

FIFTH STEP:

Cover the tortillas with the remaining meat mixture and the remainder of the shredded cheese.

SIXTH STEP:

Bake for 20 minutes
