What type of sausage do you recommend?
I generally will use Italian Sausage. But, you could use any type you want. Breakfast Sausage, Beef Sausage or Turkey Sausage. Any one of these sausages will taste wonderful.
Can I use colored peppers?
For this dish, I prefer to use all colors of peppers. Green bell peppers, yellow, orange and reds, and I will even throw in some green chilis once in a while. Mostly when it is just hubby and I home to eat.

You can portion what is left into single serve dishes, or keep it in one airtight dish in the refrigerator for three to four days.

Since the peppers are already cooked, yes you can freeze the dish in an airtight container for up to three months.
Can I serve this on a hoagie roll?
Of course you can! This makes an excellent sandwich. You could top it with your choice of shredded cheese. I prefer to use provolone cheese as it reminds me of a Philly Sandwich. This could also be a way to make dinner on the run, you know those busy nights when the kids have activities and games. Or those nights when you have meetings to rush off to, this is a dinner that you can grab and wrap in a towel and eat while you drive.

1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 red bell pepper, cut into strips
5 links of Italian sausage
1 medium onion, sliced
3 tsp garlic, minced
2 tbsp Olive Oil
2 tsp Italian Seasoning
1 16 ounce can of crushed tomatoes
Salt and pepper, if desired

FIRST STEP:
Heat the oil in a skillet and brown the sausages until they are browned on all sides
Add the sliced onions and all the sliced peppers, saute for roughly five minutes until they are softened.
