Famous Chicken Carbonara

            Chicken Carbonara is the dish I will never forget. The first time I made it for the family, they searched high and low to find the containers that I had brought it home in.

They wanted to know what restaurant I was going to that they did not know about. This made for a very humorous dinner that evening. This is one of those meals that will make people think you bought it, instead of making it. However, it is not a difficult meal to make.

            Like every other recipe, I tried to make this as easy as possible. To me, there is no reason we cannot have the same quality food that you get from fancy restaurants.

Sometimes it may take longer to figure these out, but trust me, I try my best. I think I nailed this one.

            Do I seriously use Laughing Cow cheese?

Yep! Ever since I found these little gems, I have used them for so many items. They are perfectly flavored, perfect size. I am just addicted to these little treasures.

            Can I use a different pasta?

Yes, you can, try to find one that is similar in size, if you use one too small, there is not the balance of pasta and sauce, too large of pasta and not enough Chicken and sauce to cover the pasta.

            Can I skip the bacon?

You certainly could. Trust me though, the flavor of the bacon added is phenomenal. If you do not like bacon, cut the amount in half. You will not be disappointed that you left the bacon in.

            What should I serve with this dish?

It already has everything you need to be a complete meal. However, you can always add a simple dinner salad with dressing.

What do you need to make Famous Chicken Carbonara

            1 pound chicken breast, boneless and skinless

            3 strips of bacon, cooked and drained

            1 tbsp butter

            Salt and pepper to taste

            ½ tbsp Olive Oil

            1 small onion diced

            3 cloves garlic, minced

            2 Laughing Cow cheese wedges

            ½ cup low fat half and half

            ⅓ cup Parmesan cheese, grated

            1 cup frozen peas

            1 ½ cups bow tie pasta, cooked according to package directions

            1 cup chicken broth

            1 tbsp water

            1 tbsp cornstarch

            Parsley, optional as garnish

How to make Famous Chicken Carbonara

FIRST STEP:

Cook bacon and set aside

Cook the pasta and drain

SECOND STEP:

In a skillet, cook the chicken in the butter for 5 to 6 minutes on each side.

Set to the side to cool, then cut into 1 inch bite size pieces

THIRD STEP:

In the same skillet, add the garlic, onion, and oil. Cook until the onions are just a little crispy, not burned

Add in the cheese wedges, the half and half and the chicken broth, whisk together until the cheese melts

FOURTH STEP:

Add in the drained pasta, peas and parmesan cheese

In a small bowl combine the water and the cornstarch

Mix into the skillet until the sauce begins to thicken

Crumble the bacon, add in the chicken and the crumbled bacon to the skillet and stir to combine well

Sprinkle with parsley to garnish
