Five Minute Chocolate Fudge

         Fudge, sweet, gooey, dark, light, peanut butter, milk chocolate, or whatever flavor trips your trigger, this fudge recipe is the best around. It takes less than ten minutes to make and is probably one of the two easiest fudge recipes that I have used in all my years. This is one that even those people on television are claiming as theirs. Come on! We all know someone who has made this before.

Anyway, back to this recipe. It does not include a whole shelf full of ingredients, does not take standing at the stove watching sugar boil until it reaches the hard ball stage. As a matter of fact, you will love this recipe, and hate me for sharing it with you!

It is just too easy to make, then sit and eat the rest of the day. I have no willpower when it comes to chocolate fudge. So, if you are like me, I do apologize for this.

When all the ingredients have been added, you could toss in some extras such as white chocolate, raisins, peanut butter or even more marshmallows.

            How do I store this fudge?

The fudge can be cut and wrapped in parchment individually, or place a sheet of parchment over the pan and then wrap tightly in foil. This helps the fudge to remain soft, the way you like it. The fudge can sit at room temperature for 7 to 14 days. In the refrigerator, you can store covered fudge for 2 to 3 weeks.

            My fudge didn’t harden enough, why?

Your home may have too much humidity. However, if this happens, the fudge can be used for some fabulous tasting hot chocolate. Just let the fudge sit in the milk as you are heating it, continuing stirring and there you go! You could also melt it back to a fully liquid stage and use it as a ganache on a dessert.

            Can I add Peanut Butter?

You can do that too if you want. This should be added when you add the butter and vanilla. Same thing if you have chosen to add nuts to the fudge. Mix them in at the end.

            Why is my fudge gritty?

When you are dissolving the sugar, you must make sure that it is fully dissolved.

            1 ½ cups white sugar

            ¾ cup evaporated milk

            1 tbsp unsalted butter

            1 cup semisweet chocolate chips

            1 cup chopped pecans

            1 tsp vanilla extract

            16 large marshmallows

FIRST STEP:

In a saucepan on medium heat, add the butter, evaporated milk and sugar

Whisk often while bring the mix to a boil

SECOND STEP:

Boil for 5 minutes, to ensure the sugar is dissolved

Remove the pan from the heat and add in the marshmallows and chocolate chips, stirring to melt all

Slowly stir in the vanilla and the chopped pecans

Butter a 9×9 baking pan

Pour the hot mixture into the prepared pan

Place into the refrigerator until the fudge is set.
