This is a hearty dish, so sides are not mandatory. I do however, serve it up with some garlic roasted potatoes and a nice dark green dinner salad, with a little color to make it pop.

            Garlic is a healthy spice, granted you do not want to overdo it, unless you want to spend an hour gargling. Let me tell you, it is so worth it! My breath may be harsh, but my heart is healthier thanks to garlic. I know we are all on budgets when it comes to groceries. I am asking you to buy range free or organic chicken breasts for this recipe dish. It just tastes a whole lot better.

            There is no reason to come up with ideas for sides. This is a one pan meal.

IF, you have any left after dinner, place it into an airtight container and into the refrigerator. It will be good for 3 to 4 days.

Absolutely! It freezes like a dream. When you are ready, let it thaw overnight in the refrigerator, and then reheat in the microwave or in the oven, until heated through.

            Can I use dried herbs in the recipe?

Fresh is always the best. There is so much more flavor in fresh herbs. If you can’t then go ahead and use the dried herbs.

What do you need to make Garlic Herb Chicken

            10 ounces frozen, french style green beans

            3 large chicken breasts, washed and trimmed

            1 pound of golden baby potatoes, diced

            ½ tbsp butter

            1 tsp salt

            1 tsp black pepper

            1 tbsp garlic, freshly minced

            ½ cup milk

            1 tbsp all purpose flour

            2 tbsp softened cream cheese

            2 sprigs of Thyme

            2 tsp oregano

            ½ cup Parmesan cheese, freshly grated

            ¼ cup fresh parsley for garnish

How to make Garlic Herb Chicken

FIRST STEP:

Preheat the oven to 425*

Arrange the chicken on a cookie tray, with sides

SECOND STEP:

Arrange the potatoes, green beans around the chicken

Drizzle with olive oil and sprinkle with the seasonings

THIRD STEP:

Place the tray into the oven and bake for 25 minutes, chicken should be 160*

While that is baking, place a skillet on medium heat and melt the butter in it.

FOURTH STEP:

After the butter melts, saute the garlic for one minute

Whisk in the flour, it will be thick

FIFTH STEP:

Add in the milk and whisk well

Add in the cream cheese, stirring until melted.

SIXTH STEP:

Add the Thyme and the oregano

When the meal is done baking, pour the cream sauce over the chicken

SEVENTH STEP:

Garnish with freshly grated parmesan cheese and fresh chopped parsley
