Greek Spinach and Cheese Quiche Squares

         A perfect dish for vegetarians and all! These quiche bites could be made for a late brunch, for a snack at game time or for a lazy and laid back weekend. They are almost like a full blown quiche, without the crust though. A quiche is made with lots of eggs so it is packed with protein. This has dairy from the cheese and lots of nutrition from the spinach.

            Of course, these could be changed up by adding meat to the quiche. Cube some ham slices or crumble a ration of bacon. Even sausage would taste awesome thrown in this dish. You could also feel free to add in some halved cherry tomatoes, green bell peppers, onions and celery. Not that this dish needs any added flavor, this quiche recipe will blow your socks off!

            I am relatively new to Quiche in our family, picky kids seem to decide the menu many times. However, I have been changing things up and having them at least try the foods. They seem to want to believe that mealtime at home is like sitting down in a restaurant. It is time they start learning to appreciate foods other than what they know.

I keep telling them that it might surprise them when they realize how good some foods are. Just because the name is strange, does not mean that the food tastes terrible. So we compromise more.

Certainly! This is one of my favorites to make in advance. You can prepare all the ingredients, but I suggest you keep them separate until you are ready to cook.

            How do I store the Quiche?

Wrap it tightly with plastic wrap or place into an airtight container. It can be in the refrigerator for 2 days.

            Can I freeze the Cheese and Spinach Quiche?

When it has completely cooled, place it into an airtight container and then into the freezer. You can leave it for up to 2 weeks.

            Can I add the vegetables raw?

No, I would suggest steaming or cooking the vegetables before adding to the Quiche. There is a chance that they will not cook thoroughly if you add them raw.

            1 cup all purpose flour

            1 tsp baking powder

            1 cup milk

            16 ounces baby spinach, frozen and thawed, squeezee dry

            2 cups crumbled Feta Cheese with oregano and sun dried tomatoes, with black pepper

            2 cups shredded cheddar cheese

            1 tsp minced onion

FIRST STEP:

Preheat the oven to 350*

Crack the eggs into a mixing bowl and beat well
