Hobo Dinner Foil Packets

            I have such great memories of making these over a campfire when I was in Girl Scouts. That was the first time I had tried them and I have never forgotten them.

They make for a hassle free cleaning after dinner each time that I make them for my troop at home. I am sure you know what these are, they have actually been given many names over the years and in the different areas of our country.

            Most common foil packets include the beef patty, potatoes and carrots. However, you can change up the type of meat you use and also the type of vegetables. For instance, try a honey barbecue chicken with carrots, but you could also make a Garlic Chicken, or a Garlic Teriyaki Steak with assorted vegetables.

I usually switch up the vegetables and put in some asparagus and cauliflower along with the carrots. This way I can leave out the extra carbs if I have been slack in that department.

            What are some of your favorite variations?

I love to put mushrooms in my packets. I also have tossed in some cabbage slices, brussel sprouts and added in different herbs and spices. It changes it up and adds some great flavor.

            What are good meat substitutes?

If you get tired of using beef, try some chicken, ground turkey or even pork chops. I have also done these great little packets with steak cubes and barbecue sauce.

            Should I serve anything with the hobo foil packet?

These are seriously a meal all by themselves. Unless of course you try the steak tips with barbecue sauce, then you may want to have a salad on the side or some creamy homemade mashed potatoes.

What do you need to make Hobo Dinner Foil Packets

            1 pound ground beef, lean

            1 tsp salt

            ½ tsp ground black pepper

            ½  tsp onion powder

            ½ tsp garlic powder

            1 pound baby red potatoes, washed and sliced in half

            3 carrots, sliced or cut into cubes

            ½ white onion, sliced

            2 tbsp Olive Oil

            1 tbsp Italian Seasoning

            1 cup Colby Jack cheese, finely shredded

How to make Hobo Dinner Foil Packets

FIRST STEP:

Cut 4 large sheets of heavy duty aluminum foil

In a medium bowl combine the ground beef, garlic powder, salt, pepper and onion powder and mix it all together to combine well

SECOND STEP:

Shape the meat into 4 equal sized patties and place in the center of the sheet of foil

THIRD STEP:

In a medium bowl add in the cut potatoes, the sliced or cubed carrots, the sliced onion, the Olive Oil and the Italian Seasoning

Toss to coat all ingredients well

FOURTH STEP:

Divide the potatoes and carrots evenly between all four packets

Bring the sides of the foil up and roll the edges together

Flatten the ends and roll the two edges together

FIFTH STEP:

Place the packets on a medium hot grill or on the coals on the sides of a campfire

Let cook for 45 minutes and test the potatoes, if needed, close the packet and cook for another 15 minutes or until the potatoes are soft.

When done, open the packet and top with ½ cup of cheese over the meat patty.
