Gyros have had their phases of popularity, they come and go in bursts. However, my family loves gyros and they are relatively easy to make.
I even made some changes to the steps and the way things are done to make it even easier for these busy nights. Gyros are meat made with a few vegetables and then a cold creamy sauce is added.
However, I am not a fan of the cold sauce, unless it is ranch. I have been known to use melted white American cheese. There are times that I will combine blue cheese with a cucumber dip and pour that on.
Gyros are so tasty and easy to grab and go when needed, and on busy nights. Again, use the garnish topping of your choice, after all, you are the one eating them.

Do we use Pita Bread for these or tortillas?
I generally use pita bread. It is thicker than the tortilla so it holds the ingredients more firmly.
Can I store this dish?
If you have some of the meat mix left over, you can certainly place it into an airtight container and place it in the refrigerator for up to 4 days. The meat and vegetables could also be frozen. When it is completely cooled off, place into a freezer bag and place in the freezer for up to 3 months. You do not want to refrigerate or freeze the dish together. The Pita will likely soak up juices and get soggy. Store it separately until you are ready to eat.
Do I have to use the red peppers?
Absolutely not! Use just green pepper and onion, or add in some yellow pepper. I would not leave it out completely though, the combination of flavors is part of what makes these perfect.
How do I warm up the Pita bread?
Lightly dampen a paper towel with water, cover the pita and place it in the microwave. Heat for 15 to 20 seconds, or just until desired temp is reached for the bread.

1 ½ pounds lean ground beef
Salt and pepper to taste
3 tsp Olive Oil
1 cup chopped green pepper
1 cup chopped red pepper
1 cup onion, chopped
1 can Rotel green chiles with diced tomatoes, your choice Hot or Mild
4 Pita breads, softened and warmed slightly
½ cup sour cream
¼ bleu cheese crumbles

FIRST STEP:
Slightly warm the Pitas in the microwave
In a skillet crumble the ground beef

Add in the olive oil, green and red peppers and the onion

SECOND STEP:
Cook until meat is no longer pink
Continue until the peppers and the onions have softened
THIRD STEP:
Add in the can of Rotel and stir to mix in well
Season with salt and pepper to taste
FOURTH STEP:
Lay out four sheets of aluminum foil
Place a pita on each
SIXTH STEP:
Add roughly ¼ of the meat mix onto each pita
Using the aluminum foil, roll up the foil and the gyro together
Top with the sour cream and bleu cheese if desired.
