Italian Chicken Soup in the Crockpot

The chilly days are coming up soon. This is the time of year that I like to get all my soup recipes together. This Italian Chicken Soup is a hearty soup that will not only fill you up, it will keep you warm on the inside.

This is not your ordinary and boring Chicken noodle soup, this has a completely different flavor added that is going to make you a believer in Chicken Soup being good for the Soul all over again.

The soup has just a few basic ingredients and is simple to put together. It cooks all day in the crock pot so you come home to a ready made meal.

There is nothing better than that after a busy day. It is not every day that I am used to kids asking me to make soup, this soup has caused a change in my family.

            What should I serve with this?

I will usually make some toasted garlic bread, cheese bread or some homemade soft rolls. Sometimes, breadsticks are the perfect addition too.

            How do I store this Soup?

I keep any that is left in a covered container in my refrigerator. They are good for up to 5 days. Cool completely and place into an airtight container.

            Can I freeze this soup?

You can, just follow the same rules. Cool the soup completely then place into an airtight container. The soup will last in the freezer for up to 3 months.

What do you need to make Italian Chicken Soup in the Crockpot

            2 Chicken breasts, cooked and shredded

            1 onion, chopped

            1 can diced tomatoes

            1 red pepper, diced

            3 carrots, sliced

            1 tsp garlic salt

            1 tsp salt

            2 tbsp Italian seasoning

            1 Bay leaf

            ½ tsp fresh ground pepper

            8 cups Chicken Broth

            1 package, 16 ounces rotini pasta

            1 cup Parmesan Cheese, freshly shredded

How to make Italian Chicken Soup in the Crockpot

FIRST STEP:

Place all the ingredients into the crockpot, the chicken, broth, diced onion, carrot, pepper and the seasonings.

Save the pasta and the cheese for later

Cover and seal, cook for 8 to 10 hours on low

SECOND STEP:

Cook 4 to 6 hours on high

THIRD STEP:

Add the pasta and stir, (pasta should be uncooked still)

Cook for 20 to 30 minutes, until the pasta is tender.
