Jalapeno Tortilla Roll Ups

         It is football season in my home. This means that we have people over quite often. Of course, there are full days on Sunday, then you have Monday night football, Thursdays football.

I love having company, but I am also very grateful when our friends decide to host some of these days also. I do love cooking and coming up with great appetizers, meals and snacks, but it is also fun when I get to try others’ foods too.

            This dish is one that I picked up from one of the neighbors when they hosted gameday. I may have tweaked it a tiny bit. We do that when we get recipes from others. You have to make it so it works for your family.

Many times I will change up a recipe just to make it easier. Yes, I do that with a lot of recipes. I apologize for changing them, we all do this though. All I did was change the way these are done. I lay them out on a plate and they look gorgeous! They have a touch of added flavor from the bacon.

            How can I minimize the heat?

If your family does not like the heat from jalapenos, you can boil them slightly before using them.

            What size of tortilla can I use?

You should use the small sized, 6 inch tortillas. If you use larger than you will have to adjust the amount of filling you put in.

            Do I have to refrigerate them before I slice them?

If you are short on time, you can skip the part of refrigeration before slicing. Place them in the refrigerator for a short time before serving.

            Can I add chopped green onions or red bell pepper to the mix?

The colors would make it perfect around the holidays in December. You could add yellow bell pepper for Easter too.

What do you need to make Jalapeno Tortilla Roll Ups

            4-6 inch tortillas

            8 ounces cream cheese, softened

            2 jalapeno peppers, seeded and membranes removed, chopped small

            1 cup cooked and crumbled bacon

            Pinch of garlic salt or garlic powder

            2 or 3 green onions, chopped

            2 cups Pepperjack cheese, shredded

How to make Jalapeno Tortilla Roll Ups

FIRST STEP:

In a large bowl combine the softened cream cheese, the diced jalapeno peppers, the cooked and crumbled bacon and the garlic powder

Stir well to combine completely

SECOND STEP:

Lay a tortilla on a plate and spread a layer of cream cheese mix over the entire tortilla

Roll up as tight as possible and lay seam side down on a plate

THIRD STEP:

When all tortillas are rolled up, place the plate into the refrigerator for at least 30 minutes.

Just before serving, slice the tortilla rolls into ½ to ¾ inch slices

FOURTH STEP:

Set each slice on a serving plate, sprinkled with a few of the chopped green onions.

Then layer on top of each other with sprinkles of green onion over each layer of tortilla slices.

FIFTH STEP:

Garnish with the chopped green onions and a sprinkle of cooked and crumbled bacon.
