Jamaican Banana Bread

            I had never imagined that this was such a thing. I know that is ridiculous of me. However, it is not one of those things I contemplate on the menu of other countries.

Truth be told, I do not know why it surprised me that the Jamaicans had their own recipe for Banana bread. I cannot lie here, the thought of coconut, lime and bananas with a touch of Rum flavoring does actually sound quite delicious.

Other than the coconut, rum and lime, Jamaican Banana bread is similar to many of the recipes that can be found online. 

You must admit, when the family is expecting bland banana bread and they get a taste of this delightful blend that actually leans towards tropical, it is hard to not like it.

Frequently Asked Questions:

            Could I add pineapple chunks to make it a truly tropical blend?

I am sure it might take more than pineapple bits to make it tropical. However, I have added multiple fruits to my banana bread recipes many times over the years. Adding fruit makes for a healthy version and supreme tasting bread.

            Could I use a 9x 9 pan and make these into brownies?

Of course you can! You may have to use two 9×9 pans though as the recipe is enough for two loaves.

            Can I leave the Rum out?

When the bread is cooked, and the glaze, the alcohol content will burn off accordingly. There will be no alcohol in the bread or the glaze, just the rum flavor.

What do you need to make Jamaican Banana Bread

            ¼ cup melted butter

            2 large eggs at room temperature

            ¾ tsp baking soda

            ½ tsp salt

            1 cup sugar

            1 ½ cups mashed bananas, this equals three large bananas 

            ½ tsp vanilla extract

           ¼ cup yogurt, plain

           1 cup toasted coconut

           3 tbsp Bacardi black rum

Glaze:

            ¾ cup confectioner sugar

            4 tbsp lime zest

            1 ½ tbsp Bacardi Black rum, divided

            ½ cup toasted coconut

 

How to make Jamaican Banana Bread

FIRST STEP:

Preheat the oven to 350*

Prepare a loaf pan by spraying it with non-stick spray

SECOND STEP:

In a bowl whisk together the dry ingredients and set to the side

In a mixing bowl combine the butter and the sugar, mix well. Add the eggs one at a time, beating after each one.

Mix in the bananas, yogurt, rum and the vanilla

THIRD STEP:

Slowly add the dry ingredients to the banana mix and mix thoroughly

Beat thoroughly after each addition

Fold in ½ cup of coconut without over mixing.

FOURTH STEP:

Scoop the butter into the prepared loaf pan

FIFTH STEP:

Bake at 350* for 60 minutes

Test the loaf with a toothpick. If it comes out clean, it is done. If it comes out doughy, continue baking for a few minutes.

Once baked fully, flip out on a cooling rack and allow to cool

SIXTH STEP:

Next make the glaze, in a bowl, mix together the confectioners sugar, lime zest and rum

Drizzle this over the top of the loaf.

SEVENTH STEP:

Sprinkle the lime zest and remainder of the coconut

Set off to the side to cool completely
