Lasagna Stuffed Chicken

         This is a recipe that is going to help you stretch your food budget, yet give you two of your favorite foods. Chicken stuffed with Lasagna is also a keto qualified food. For me, it is one of the best comfort foods out there.

I do love this dish, it is so delicious. I did use ricotta cheese here, but you could substitute it for cottage cheese. There is no pasta in this dish, which makes it great for Keto.

            Family friendly, low carb, great taste, easy to make and easy to clean up. There should be nothing left to say! When you have a family that loves chicken and Italian foods and that is all they seem to request, you need to come up with unique ideas and menus. This one did it for my family.

            Since it is Italian, I serve this with a side salad, but it is also a chicken dinner. I also roast some carrots, onions, broccoli and cauliflower. I try to stay as low in carbs as possible with most dishes I make.

            Can I mix the cheese with the marinara and still have stuffed chicken?

Yes, I believe you could. You would have to add more marinara or pasta sauce to the recipe to be sure you have enough.

            Can I freeze this dish?

You can prepare the chicken with the cheese and freeze it in individual packages before you bake it, or you can bake it and then place it into an airtight container and into the freezer.

            Will the chicken become dry when I reheat it?

When you remove it from the freezer, let it thaw fully in the refrigerator or set it on the counter until it gets to room temperature. Then you can heat it up with no fear of dried out chicken.

What do you need to make Lasagna Stuffed Chicken

            5 boneless Chicken breasts

            1 egg

            15 ounces of Ricotta cheese

            2 tsp garlic minced

            2 tsp Italian seasoning

            2 ½ cups Mozzarella cheese, shredded and divided (1 ½ and 1 cup)

            1 ½ cup marinara, (divided, 1 cup and ½ cup)

            Grated parmesan cheese for garnish

            Freshly chopped parsley for garnish

How to make Lasagna Stuffed Chicken

FIRST STEP:

Preheat the oven to 400*

Make a slit in each chicken breast without cutting all the way through

SECOND STEP:

In a mixing bowl combine the ricotta cheese, egg, Italian seasoning, garlic, salt and pepper and 1 ½ cups of the mozzarella cheese.

Stir to combine well.

THIRD STEP:

Using a spoon, spread marinara on the inside of the slit, both top and bottom

Spoon a large spoonful of the ricotta mix into the slit of each piece of chicken

FOURTH STEP:

Fold the top section back over the bottom section of chicken

Spoon more marinara over each chicken breast

Sprinkle the remaining mozzarella cheese over the tops of the chicken

FIFTH STEP:

Bake for 20 to 25 minutes or until the chicken is done, temperature reading 165*

Garnish with fresh chopped parsley and another sprinkle of Parmesan cheese.

Serve with a salad or roasted vegetables!
