Lemon desserts are just one of those that completely delight me! They are refreshing, bright and have a cool taste. Not because this is a great dessert, it is, but because it leaves a chill on my tongue.

Even If the dessert had not been refrigerated, the bars have a cool temperature feeling. This lemon Cheesecake is a no-bake dessert which makes it perfect for those who do not want to have the extra heat in the house.

I absolutely love these Lemon Cheesecake desserts. This is not overpowered by lemon, it is a subtle lemon mixed in with the creamy cheesecake mix. All this flavor on a Graham cracker crust. For me there is no better combination.

This is a very simple recipe that will save time and keep you away from the heat of the oven. It takes very little time to make and I am betting it is going to be your favorite dessert!

Certainly! I use the graham cracker crust because it is our favorite, but you feel free to make the crust you prefer.

            Can I freeze the Lemon Cheesecake No-Bake?

You could freeze the dessert. Thaw it in the refrigerator overnight.

What do you need to make Lemon Cheesecake No Bake

            2 cups Graham Crackers, crumbed

            ½ cup Butter, unsalted and melted

            ½ tsp Salt

            2 pkg Lemon Jello

            1 cup Boiling water

            24 ounces Cream Cheese, softened to room temperature

            Juice from 1 lemon

            Zest from 1 lemon

            1 ½ cup Confectioners Sugar

            2 cups heavy whipping cream

How to make Lemon Cheesecake No Bake

FIRST STEP:

Spray a 9×9 baking dish with nonstick spray

In a bowl combine the melted butter, salt and graham crackers, mix until thoroughly combined

Press the mixture into the bottom of the prepared pan

Place the crust in the refrigerator while you make the filling

In a small bowl combine the jello and boiling water and stir until the jello is dissolved

Set to the side to cool to room temperature

SECOND STEP:

In a large bowl combine the cream cheese and Confectioners Sugar until the mixture is smooth

To this bowl add in the jello mixture, the heavy whipping cream, lemon juice, and lemon zest until it is completely blended

Continue beating with the electric mixture until mixture begins to thicken

THIRD STEP:

Pour the mixture over the Graham Cracker crust and place into the refrigerator until the filling has set, for at least 4 hours
