            So many people are searching for low carb options for meals now. I have truly been working on changing some up so that people can enjoy them. I may or may not be driving my family crazy with all the questions over mealtime, yet they somewhat understand. 

I do believe that I have the perfect Low Carb Bacon Cheeseburger Casserole for all of you! Hold on and get ready to have your socks knocked off!

            I will not lie, I find that quite often I am craving a huge bacon cheeseburger. I would actually eat it everyday if I could.

I had actually posted this one a while back, but I did not think that many of you saw it at that time. So now, you are going to get to enjoy a better version of that recipe.

It certainly does, just not with as much breading. In my opinion, that bun ruins a good chunk of meat!

            What can I serve with it?

I had actually added some Cauliflower rice to the casserole the other night. They again were in awe! It adds a little more bulk without adding much in the way of carbs and fat.

            How do I store this?

If you have any left, I usually don’t, wrap it tightly with plastic wrap and place it in the refrigerator for up to 2 days.

What do you need to make Low Carb Bacon Cheeseburger Casserole

            1 pound lean ground beef

            ½ pound sliced bacon, cut, cooked and set to the side

            ½ sweet onion, diced

            1 clove garlic, minced

            4 tbsp cream cheese, softened

            2 tbsp low sugar ketchup

            1 tbsp mustard

            1 tbsp Worcestershire Sauce

            1 tsp seasoning salt

            4 large eggs

            ¼ cup heavy cream

            1 tsp black pepper

            1 tsp hot sauce(optional)

            8 ounces freshly grated Cheddar cheese

            1 tsp fresh dill, for garnish

FIRST STEP:

Add the ground beef to the skillet and cook until it is done thoroughly, drain the fat off

Add the onion and garlic to the skillet with the meat, cook for 5 minutes stirring frequently

Add in the ketchup, mustard, Worcestershire sauce and the cream cheese

SECOND STEP:

Sprinkle with the seasoned salt and cook on low until cheese is melted, stirring constantly

Spread the meat mix into the 8×8 baking pan

In a bowl beat the eggs and the heavy cream together

Stir in the pepper and the hot sauce

Sprinkle the bacon over the meat
