Amish Macaroni Salad

         The tangy and creamy sauce is what makes this salad awesome! It is made with mayonnaise, vinegar mustard and smoked paprika, with just a touch of sugar. The big chain stores are close in taste, but I am partial to the authentic taste of Amish Macaroni Salad. There is nothing that can compare. We were not able to have many get-togethers in the last year or so, however, this salad was one that made it to each picnic, party, and reunion that mattered.

            The authentic Amish Macaroni Salad is one that can be paired with meals all year long. Although this is one that is known for summers, it can also give you a good feeling in the middle of winter. It is like a touch of summer on a cold day. Of course, every dish has its own little secret, and the one for Amish Macaroni Salad is no different.

The treat here is that sweet pickle relish can be used. It just gives it an added tang with a touch of sweetness. I will warn you though, it may seem very easy to substitute a different mayonnaise, or skip the relish or the egg. Please do not do so. That is taking away from the special taste. I admit, your friends and family may not notice, but you will and you may feel guilty about it.

            The Amish Macaroni Salad makes a perfect side for any dish it is served with. Grilled chicken, grilled pork or even burgers together with the salad make a great family meal. I have made it and served it as a stand alone dish many times. Especially on those hot days of summer.

            Can I make this Salad ahead of time?

You can, but let me give you one tip for this. When you put the salad together, only use half of the mayonnaise dressing. This will ensure that you can still add some more mayonnaise to the pasta without ruining the taste. Store it in an airtight container, in the refrigerator. Right before serving, add the remaining half of the dressing.

            Can I freeze this salad?

I do not recommend freezing the salad. It will have a different texture and taste when it thaws.

            Can I use a different mayonnaise?

It is highly recommended to use Miracle Whip. It is thick and creamy, compared to the others.

What do you need to make Amish Macaroni Salad

            2 cups uncooked elbow macaroni

            3 large eggs, hard boiled

            3 sticks celery, chopped

            1 onion, chopped or diced

            2 tbsp sweet pickle relish

            3 tbsp yellow mustard

            1 small red bell pepper, stemmed, seeded and chopped

            2 cups Miracle Whip salad dressing

            ¾ cup white sugar

            2 ¼ tsp white vinegar

            ½ tsp celery seed

            Salt and pepper to taste

How to make Amish Macaroni Salad

FIRST STEP:

Cook macaroni according to package directions

In a large bowl, combine the eggs, relish, red pepper and onion

SECOND STEP:

In a small bowl stir together the salad dressing, mustard, vinegar, salt, sugar and celery seed
