I do love some Mexican foods, and when I find recipes as easy as this one turned out to be, I am in Mexican heaven. Since the first time I tried this, I have made different varieties, but, still love the chicken Dorito Casserole the best. That is why I am sharing this one with all of you! You guys have seen my dump cake recipes, think of this one as a dump casserole. Because that is pretty much what it is.
We also love our Taco night, however, tacos can become boring over time also. So we need to change up a little to make it worth it. That is part of the fun of having specific nights for different cuisines, isn’t it? To try different meals within the category? At least it should be, that makes it a learning experience also.
This casserole is filled with bits of chicken, black beans, Crushed Doritos, cheese and soup. It really is a simple dish and extremely flavorful. So quick to put together, it disappears just as quickly.
When you actually put this together you will see what I mean by resembling a dump recipe. If your crew is not a fan of green chilis, go ahead and leave the can of rotel out.

The recipe calls for Cheddar Cheese, can I use something else?
Of course! You could make this with Nacho cheese, Mexican blend cheese or even white American.
What do you need to make Mexican Dorito Chicken Casserole
4 boneless and skinless chicken breasts, cooked
8 ounces Doritos chips, crushed
1 can black beans, drained and rinsed
2 small cans of Cream of Chicken soup
1 can rotel tomatoes and green chilis
¾ cup whole milk
1 cup Cheddar Cheese, shredded
How to make Mexican Dorito Chicken Casserole
FIRST STEP:
Preheat the oven to 400*
Line a baking sheet with foil
SECOND STEP:
Season the chicken breast with salt and pepper and place onto the foil lined tray
Bake for 20 to 25 minutes
THIRD STEP:
Remove from the oven and set aside to cool
Spray a baking dish with nonstick spray
FOURTH STEP:
Put half of the crushed doritos as the bottom layer in the baking pan
FIFTH STEP:
In a bowl, mix the soup with the milk
Shred the chicken breasts using two forks
Stir in the black beans and the can of rotel tomatoes, stir until blended well.
Place a layer of shredded chicken and bean mixture on top of the Doritos
SIXTH STEP:
Spread a layer of the soup over the chicken
Sprinkle with cheese
SEVENTH STEP:
Repeat the layers one more time each and place pan into the oven
Bake for 20 to 25 minutes, until the cheese is bubbly.
The chicken has already been cooked so that is not a concern this baking time.
