Mini Cherry Cheesecake Dessert

            These are my all time favorite miniature desserts. If you do not have a mini muffin pan, I beg you, go out and buy one right now! This is what makes the Cherry Cheesecake dessert work so well. You can eat 3 or 4 or even 12 and still want more. We usually make a double batch of these so that I always have some available.

These are the perfect size for my family. I am the only one who has a huge sweet tooth, The mini bites are perfect for the rest of the family, they are happy with just one each.

            Why is this the perfect recipe? It makes 4 dozen cute little Cheesecake bites. I can also use different flavored toppings to make a variety and also have some plain flavored Cheesecake bites. I also love to make these for the holidays. There are so many other treats available at everyone’s home that bringing miniature treats works better.

            You could use cherry pie filling, apple, blueberry or raspberry topping. You could also use chocolate, caramel or leave some plain. Do not overfill each of the muffin cups, and also remember to not over bake these. If, while baking, you notice that the filling is sinking, it means that you beat the cream cheese too much and too long. Cheesecake is a finicky dessert.

Frequently Asked Questions:

            Can I use homemade topping instead of canned?

You can, if you have the ambition to do so, I say go ahead! This would be a little more time consuming, but very well worth it.

            Can I use crumbled Oreos instead of graham crackers?

Again, feel free. This too, will add to the variety.  You would want to prepare that type of crust the same way.

            Could I use a full size muffin pan?

Yes, you could certainly do that. The baking times will vary according to size though.

What do you need to make Mini Cherry Cheesecake Dessert

            1 ½ cups crushed graham crackers

            ½ cup butter, unsalted and melted

            16 ounces cream cheese, softened

            1 cup granulated sugar

            2 large eggs

            ⅓ cup sour cream

            1 tsp vanilla

            1 tbsp flour

            1 can cherry pie filling

How to make Mini Cherry Cheesecake Dessert

FIRST STEP:

Preheat the oven to 350*

Fill mini muffin tins with foil lined muffin cups

SECOND STEP:

In a medium bowl stir together the melted butter and the graham crackers

Place about 1 tbsp graham cracker mix into each paper lined muffin tin

THIRD STEP:

In a large bowl combine the cream cheese with the granulated sugar until smooth

Beat in the eggs until well mixed

Add in the sour cream, flour and vanilla scraping the sides often

FOURTH STEP:

Place an amount into each muffin cup, about ½ inch from the top

FIFTH STEP:

Bake for 20 to 25 minutes, they are done when slightly loose in the middle still

SIXTH STEP:

Remove from the oven and let cool for 20 minutes, after 20 minutes place in the refrigerator to cool completely

Chill for at least two hours

Top each with a spoon of cherry pie filling before serving.
