Mint Chocolate Brownies

            Personally, I love a thick and gooey brownie anytime I can have one. This recipe that I am about to share is going to send your taste buds into overdrive! These are not only thick, they are rich with chocolate flavor, are covered with mint flavored frosting and then drizzled with chocolate ganache. It is heaven in every bite.

These are the treats that can be brought to the office for meetings or just to share. They are perfect for coffee clubs, church potlucks or any type of gathering that requires you to bring a dish. For the most part, everyone loves brownies and these are the perfect combination of chocolate and mint.

            There is no way that anyone can mistake these for a pan of regular brownies. These are irresistible. These are the perfect treat for the upcoming St. Patrick’s Day.

These are actually great at any time of the year. I get tons of requests to make these for office meetings, potlucks, picnics and family gatherings. You would think I have never made any other type of dessert! When you are asked to bring something, be prepared, you may need to make a double batch, that way there is enough to go around twice.

This is a definite YES! Especially if you are a fan of mint. It could not hurt anyone to have a little more mint in their lives.

          How do I store these brownies?

These brownies will be fine sitting on the counter for 4 days. Just keep them covered so that they do not dry out. If you place them into an airtight container, they can sit in the refrigerator for up to one week.

            Can I freeze these brownies?

They freeze really well! Be sure they are in air tight packaging and they will be good in the freezer for up to 3 months.

            1 box brownie mix, plus ingredients listed on box for preparation

Mint Buttercream:

            ¾ cup salted butter

            2 cups confectioner’s sugar

            1 tsp mint extract

            1 to 2 drops green food coloring

            1 to 2 tbsp heavy whipping cream

Chocolate Ganache:

            2 cups semisweet chocolate chips

            1 cup heavy whipping cream

How to make Mint Chocolate Brownies

FIRST STEP:

Preheat the oven to 350*

Prepare the brownies according to package directions

Lightly spray an 8×8 baking pan
