New York City Egg Cookies

            These are likely the tastiest and cutest cookies that I have seen in a while. It is simply a chocolate chip cookie, but added in milk chocolate ball eggs. These cookies are thick, they are chunky and they are addicting! Luckily, being chunky, I can limit myself to one or two cookies. At least that is what I admit!

The pastel colors of the eggs are perfect for Easter. And of course, the chocolate eggs are a must have in every Easter basket.

So sitting back, I thought why can I not combine the eggs into one of my favorite cookies? The following is what came out of that thought. I am pretty impressed by it.

            Normally, I would say that my family does need additional treats over Easter, however, this is one of those treats that is hard to say no to.

            Could I switch up the candies for any Holiday?

You most certainly could. This is just my new go to Easter Cookie. Not that we need any more goodies around the Holiday.

            Can I add cocoa to make it a chocolate cookie?

Of course you can. When I post a recipe, it is just basic. You are free to change it up in any manner you would like.

            Can I make these as miniature cookies?

I am not sure how that will work with the chocolate eggs, but I actually see no reason why you could not make them miniature cookies. As a matter of fact, miniature cookies would be adorable in an Easter basket.

What do you need to make New York City Egg Cookies

            1 cup light brown sugar

            ½ cup granulated sugar

            1 cup unsalted butter, softened

            2 large eggs

            3 cups flour

            ¾ tsp baking soda

            ½ tsp salt

            1 tsp cornstarch

            2 ½ cups Cadbury miniature eggs, crushed just a little

            2 cups milk chocolate chips

How to make New York City Egg Cookies

FIRST STEP:

Preheat the oven to 350* and line two baking sheets with parchment paper

In a large bowl combine the butter, brown sugar, granulated sugar, eggs and the vanilla until the dough is light and somewhat fluffy.

In another bowl, combine the dry ingredients using a whisk.

SECOND STEP:

Slowly add the dry ingredients into the wet ingredients a little at a time.

Once the dough forms, fold in the crushed candy pieces and the milk chocolate chips.

THIRD STEP:

Using a medium scoop, place some dough in the palm of your hand and roll it into a ball

Set each cookie ball on a cookie tray

FOURTH STEP:

Optional:

you can add more chocolate pieces or eggs to the top of the cookie ball before baking.

Bake for 15 to 18 minutes, until slightly golden brown.

Allow to cool completely before serving.
