         Bailey’s is one of those tastes that you grow to love, at least for most people. Using Baileys to make cheesecake into some delightful miniature little treats is genius. They taste perfect, so creamy, delicious and coated in chocolate. I am in heaven! Cheesecake is not a dessert that I turn down willingly. Certainly not when it is mixed with Baileys Cream.

            There are many tips and suggestions that I want to give for this recipe. Since this is a cheesecake, they tend to be rich in flavor and heavy in calories. I have learned to use a small cookie scoop to make the balls.

The small scoop makes them the perfect size to share. Admit it, if we must share, it should always be in smaller quantities. Especially when it is our favorite dessert.

            These turn out to be the perfect size to pass out at meetings in the office, church gatherings, potlucks, parties or other celebrations. You will likely be asked for the recipe wherever you bring these delightful treats to.

What do you need to make No Bake Baileys Cheesecake Balls

            2 dozen chocolate covered butter cookies

            8 ounces mascarpone cheese

            ⅓ cup Irish Cream Liqueur

            2 ounces dark chocolate, chopped

            10 ounces white chocolate chopped

How to make No Bake Baileys Cheesecake Balls

FIRST STEP:

Crush the cookies and place into a bowl

Add the Irish Cream to the cookie crumbs

SECOND STEP:

Add in the tub of mascarpone cheese

THIRD STEP:

Blend together completely

Line a baking tray with parchment paper

Using a small cookie scoop, begin to make the cheesecake balls and place them on the tray

Place the tray into the freezer for at least 45 minutes to freeze, longer if you have the time.

FOURTH STEP:

Using a double boiler, place the chopped white chocolate into the top pan, stirring constantly until all melted.

Be sure to scrape the sides as the water is boiling and melting the chocolate

FIFTH STEP:

Dip each cheesecake ball into the white chocolate and place back onto the tray

Return the dipped balls back to the refrigerator for an hour.

SIXTH STEP:

Using the double boiler method, melt the chopped chocolate in the top pan, scraping the sides while it is melting.

SEVENTH STEP:

When melting is complete, remove the tray from the refrigerator and drizzle melted chocolate over the tops of the cheesecake balls.

Allow to set for at least 30 minutes before serving.
