Cookies! Cookies are what make the world smile! I do not think I know a single person who does not eat a cookie once in a while! Some of us make up for the others by eating too many cookies, but that is another story.
This is just my opinion, but these should be called Monster Cookie Bars! That is precisely what they are and they are so yummy. I feel like a kid when I eat them.
This is not just another run of the mill cookie bar, uh uh! This is different because we put a layer of chocolate over the top. We will then put extra M&M candies in the chocolate topping.
Picture your child’s eyes when they get a look at these, it will be a genuine look of awe. And they will tell you they love you so much.

Do I have to use M&Ms?
No, I suppose not. You could use a different type of candy if you prefer. I will sometimes use miniature M&Ms or even just chocolate chips.
I have no Quick cooking oats, can I use old fashioned oats?
You could, but be warned, the cookies will not come out as soft as they do with the quick cooking oats.
Can I use Almond butter?
You can use any type of nut butter you like.
Is white sugar okay to use?
White sugar will not allow the cookies to be as soft as the brown sugar allows. You can, but the cookies will be more of a crunchy bar.
I do not have a food processor, what should I do?
This step is optional, you can replace the 6 tbsp of pulsed oats with 6 tbsp of flour. I use a little less flour so they do not get dry.
What do you need to make No Bake Monster Cookies
6 tbsp quick cooking oats, pulsed in the food processor
6 tbsp butter, softened
¼ cup brown sugar
6 tbsp white sugar
1 tsp vanilla
½ tsp salt
10 tbsp miniature M&Ms, divided
1 cup semisweet chocolate chips
3 tbsp heavy cream
How to make No Bake Monster Cookies
FIRST STEP:
Prepare an 8×8 baking pan by placing a layer of aluminum foil over the bottom inside of the pan
In a large bowl cream the butter and the sugar
SECOND STEP:
Add in the peanut butter and mix well
Add the 6 tbsp of pulsed quick oats and stir to combine

Stir in the vanilla and the salt

Slowly fold in the 1 ½ cups of quick cooking oats

FOURTH STEP:
Press this mix evenly in the pan
Place the chocolate chips and the heavy cream into a microwave safe bowl
FIFTH STEP:
Heat for 30 seconds in the microwave, remove and stir
Heat an additional 30 seconds until the chocolate is melted and smooth
SIXTH STEP:
Immediately spread this over the mix in the pan
Sprinkle with 2 tbsp of miniature M&Ms
Cover with plastic film and refrigerate for at least 2 hours.
Cut into bars before serving
