One Pot Chicken Rigatoni

            This is going to be the easiest chicken parmesan that you have ever made. You can do this main course dish in one pan and the results will be a creamy and tasty pasta and chicken dish.

This dish will be a minimal mess when you use just one pan/ The entire family is going to absolutely fall in love with dinner all over again.

            This is one of those main dish meals that I serve with crusty bread that takes on the creamy sauce left on my plate so I do not miss a drop of the goodness.

I also serve this with a dinner salad or simple salad. Another great idea is to serve it with a cold pea salad.

            How do I store this dish?

If you have any left, wrap it tightly or place it in an airtight container and set it in the refrigerator for up to 3 days.

            Can I freeze this dish?

Certainly! I always wrap it in my special way. This is a couple of layers of plastic wrap and then two layers of aluminum foil. The dish will be able to stay in the freezer for up to 3 months. The Chicken Parmesan can also be placed into an airtight container and then placed into the freezer.

            Can I use thighs instead of chicken breasts?

If you choose to, boneless chicken thighs will work just as well. You will need to cut them into pieces and then continue on with the remainder of the recipe.

What do you need to make One Pot Chicken Rigatoni

            2 tbsp Olive Oil

            2 tsp Italian Seasoning

            ½ tsp onion powder

            ½ tsp garlic powder

            1 tsp garlic salt

            1 small yellow onion, minced

            1 tbsp garlic paste

            Salt and pepper to taste

            1 jar Ragu Pasta Sauce (24 ounces)

            24 ounces Chicken Stock

            1 ½ cup mozzarella cheese

            ½ cup Parmesan cheese

            16 ounces Rigatoni pasta, uncooked

            Parsley for garnish

How to make One Pot Chicken Rigatoni

FIRST STEP:

Using a Dutch oven,  add the Olive oil, chicken pieces, Italian seasoning, garlic powder and garlic salt and the onion powder

Cook over medium heat until the chicken is cooked through

SECOND STEP:

Add in the onion and garlic paste

Let simmer for another 5 to 7 minutes

THIRD STEP:

Carefully add the Chicken stock and the Pasta sauce and stir to combine

Add in the uncooked pasta and stir again

Cover and cook until the pasta is cooked to taste.

FOURTH STEP:

Add in the mozzarella cheese and stir

Top the dish with the remaining mozzarella cheese and the parmesan cheese

Place the cover back on until the cheese melts

Remove from heat and sprinkle with Parsley as a garnish

Serve hot and enjoy!
